Tips for success
For a deeper flavor profile, toast the Madras curry powder in a dry pan for a few seconds before sprinkling it over the ingredients. This releases the essential oils in the spices, making the final curry much more aromatic.
However, be careful not to burn the spices, as this can turn them bitter. If you prefer a more intense color, a small pinch of turmeric can be added alongside the curry powder, though this is purely optional and does not alter the cooking time or texture.
If you find that the sauce is too thick after cooking, you can thin it out with a small amount of chicken broth or even a splash of water. Add this gradually, one tablespoon at a time, until the desired consistency is reached.
Conversely, if the sauce is too thin, you can remove the lid for the final 15 minutes of cooking to allow some of the moisture to evaporate. Always adjust the seasoning with a touch of salt to taste before serving, as different brands of curry powder vary in salt content.
Variations
- Spicy Apple Curry: Add a finely diced fresh chili or a teaspoon of red chili flakes to the slow cooker for an extra kick of heat that complements the sweetness of the apples.
- Vegetable-Rich Curry: Include diced carrots or cauliflower florets along with the onions and apples to add more texture and volume to the dish without changing the cooking method.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze in a freezer-safe container for up to 1 month. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over low heat or in the microwave until the chicken is steaming hot and reaches an internal temperature of 165°F (74°C).
Transfer any leftovers to an airtight container. Cool the dish at room temperature for no more than 2 hours before placing it into the refrigerator. The curry can be stored in the refrigerator for up to three days. When ready to eat, ensure it is heated until steaming hot throughout. If the sauce separates after refrigeration, a quick stir during the reheating process will usually bring it back to a smooth, creamy consistency.
This dish is an excellent candidate for making ahead, as the flavors often develop and deepen after sitting in the refrigerator overnight. You can prepare the ingredients and store them separately in the refrigerator for up to 24 hours before adding them to the slow cooker.
Once cooked, the leftovers can be portioned out into individual containers for easy lunches or dinners throughout the week. This makes it a highly efficient option for those who enjoy meal prepping on weekends for the busy days ahead.
Serving ideas
Serve the curry hot, ideally accompanied by steamed basmati rice or warm naan bread to soak up the creamy sauce. The sweetness of the apples pairs beautifully with the spice, so consider adding a side of fresh cilantro or a squeeze of lime juice just before serving to add a bright, fresh contrast to the rich, warm flavors of the dish. A small dollop of plain Greek yogurt on the side can also provide a cooling element if the curry is particularly spicy.
For a more complete meal, consider serving the curry alongside a simple cucumber salad dressed with vinegar and a touch of sugar. The crunch and acidity of the salad complement the tender chicken and creamy sauce perfectly.
If you are serving a larger group, present the curry in a large serving bowl with the rice in a separate dish, allowing guests to serve themselves. This presentation keeps the curry warm for longer and allows for a more relaxed dining experience.
