Tips for success

To achieve an even deeper flavor, sear the beef chunks in a hot skillet with a little oil before placing them into the slow cooker. Searing adds a layer of complexity through the Maillard reaction, which creates a more robust base for the Madeira sauce and enhances the overall color of the finished dish significantly.

If the sauce appears thin after the cooking time finishes, remove the beef and set the slow cooker to a high setting with the lid off for a short period to reduce the liquid further. This will concentrate the flavors and help achieve the desired consistency for your gravy before returning the beef to the dish for serving.

Variations

  • Mushroom Madeira Beef: Add a cup of cleaned, quartered cremini mushrooms during the last two hours of cooking. The mushrooms will absorb the Madeira gravy and add an earthy depth to the dish.
  • Herbed Madeira Beef: Tuck two sprigs of fresh thyme or a bay leaf into the slow cooker at the start of the cooking process for a subtle, aromatic herbal note that pairs beautifully with the wine.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days.
Freezer
Freeze in a sealed container for up to 2 months; thaw in the refrigerator overnight before reheating.
Reheat
Reheat gently in a saucepan over low heat until the beef reaches 165°F (74°C). Add a splash of water to thin the gravy if necessary.

Allow any leftovers to cool completely at room temperature for no more than two hours before transferring them to an airtight container. This prevents the growth of bacteria and keeps the meat and gravy fresh.

Store the container in the coldest part of the refrigerator, where the dish will maintain its quality for up to three days, allowing the flavors to meld further during storage.

This dish is an excellent candidate for making ahead, as the flavors continue to develop and improve after sitting for a day. You can prepare the entire recipe a day in advance, let it cool, and store it in the refrigerator.

When ready to serve, simply reheat the beef and sauce gently in a pot on the stove until the meat is heated through, adding a small splash of water if the gravy has thickened too much.

Serving ideas

Serve the Madeira beef hot, ideally alongside a starch that can absorb the rich gravy. Mashed potatoes, buttered egg noodles, or a crusty piece of sourdough bread are excellent choices that complement the savory, wine-infused sauce.

The tender shallots should be served on top of the beef, adding a touch of sweetness and texture to each bite.

Accompany the beef with a side of steamed green vegetables, such as asparagus or haricots verts, which provide a fresh contrast to the intensity of the braised meat.

Ensure every serving includes a generous ladle of the Madeira gravy, as it is the highlight of the dish and ties the meat and sides together into a cohesive, comforting dining experience.

Frequently asked questions

Can other cuts of beef be used?
Yes, cuts like beef brisket or bottom round are excellent alternatives. These cuts contain enough connective tissue to become tender during the long, slow braising process, similar to beef chuck.
Is it possible to cook this on high heat?
Cooking on the low setting is strongly recommended for the best texture. High heat can cause the beef to toughen quickly and may result in a less flavorful, unevenly cooked sauce.
Why is the flour necessary?
The flour acts as a natural thickening agent. As it cooks with the wine and the juices released by the beef, it transforms the thin liquid into a rich, velvety gravy.

Ingredients

  • 2 lbs beef chuck, cut into large chunks
  • 6 shallots, peeled
  • 1 tbsp all-purpose flour
  • 1/2 cup Madeira wine

Instructions

  1. Place the beef chuck chunks into the base of the slow cooker, ensuring they are distributed evenly across the bottom. Add the peeled whole shallots on top of the beef. Dust the entire mixture with the flour to help thicken the eventual sauce, and pour the Madeira wine over everything to provide the base for the braising liquid.
  2. Cover the slow cooker and cook on low for about 8 hours. Cook until the beef reaches an internal temperature of at least 145°F (63°C) and is fork-tender. Once finished, let the beef rest for at least 3 minutes before carving or serving to allow the juices to redistribute properly.
  3. Ladle the tender beef chuck chunks and whole shallots onto serving plates. Spoon the glossy, dark Madeira sauce remaining in the slow cooker generously over the top of the meat and shallots, serving hot immediately.
