Before you start

Before starting, slice the smoked kielbasa diagonally into 1/2-inch thick medallions. Measure out the marinara sauce, ricotta, and shredded provolone. Have your slow cooker ready and plugged in. No need to preheat it. The ingredients are all quick to assemble, so you can have everything ready in about 10 minutes.

Ingredients at a glance (5)
  • 2 lb smoked kielbasa, sliced diagonally into 1/2-inch medallions
  • 20 oz refrigerated three-cheese tortellini
  • 24 oz crushed San Marzano marinara sauce
  • 1 cup whole-milk ricotta cheese
  • 2 cups shredded provolone cheese

Instructions

Layer and Top

  1. Layer the Ingredients
Place the sliced kielbasa medallions in the bottom of a 6-quart slow cooker in an even layer. Add the refrigerated tortellini on top, spreading them out slightly. Pour the marinara sauce over the tortellini, making sure it covers most of the pasta and sausage.
Look for The slow cooker should be about half full, with the sauce coating the pasta and sausage.
Tip Use a spatula to gently press the tortellini into the sauce so they stay moist during cooking.
  2. Add the Cheeses
Spoon dollops of ricotta over the top of the sauce, spacing them evenly. Sprinkle the shredded provolone over the entire surface, covering the ricotta and pasta as much as possible.
Look for The top should be covered with white and yellow cheese, with some sauce peeking through.
Tip Do not stir the cheeses in; they will melt and create a creamy sauce during cooking.

At this point, the slow cooker contains distinct layers: kielbasa on the bottom, tortellini in the middle, and sauce and cheeses on top.

The ricotta dollops and shredded provolone create a patchwork of white and yellow. The ingredients are cold but well-arranged, and the sauce covers most of the pasta. This is the 'dump it in' stage.

Slow Cook

  1. Slow Cook on Low
Cover the slow cooker with the lid and cook on low for 4 hours, or until the tortellini are tender and the cheese is melted and bubbling. Avoid opening the lid during the first 3 hours to keep the heat inside.
Look for The sauce will be bubbling around the edges, and the cheese will be fully melted and slightly golden.
Tip If the slow cooker runs hot, check at 3 1/2 hours; the tortellini should be tender but not mushy.
  2. Check the Pasta
After 4 hours, carefully remove the lid and test a tortellini for doneness. It should be tender with a slight bite, and the sauce should be thick and creamy. If the pasta is still firm, re-cover and cook for another 30 minutes.
Look for The tortellini should be plump and tender, and the sauce should coat the back of a spoon.
Tip If the sauce seems thin, remove the lid and cook on high for 15 minutes to reduce slightly.

After 4 hours on low, the slow cooker should be bubbling around the edges. The cheese is melted and slightly golden in spots, and the sauce has thickened.

The aroma is rich with smoked sausage and tomatoes. The tortellini are tender but still hold their shape. The ricotta has blended into creamy pockets, and the provolone has formed a smooth, stringy layer.

Stir and Serve

  1. Stir Gently
Give the mixture a gentle stir to incorporate the melted cheeses into the sauce, being careful not to break the tortellini. The sauce should turn a creamy orange-pink color with ribbons of ricotta.
Look for The sauce will look creamy and smooth, with small white curds of ricotta throughout.
Tip Use a silicone spatula or wooden spoon to avoid crushing the pasta.
  2. Serve Hot
Spoon the kielbasa tortellini onto plates or into bowls, making sure each serving gets some sausage, pasta, and sauce. Serve hot, with extra provolone or red pepper flakes if desired.
Look for The dish should be steaming and cheesy, with a rich aroma.
Tip For a prettier presentation, sprinkle with chopped parsley or basil before serving.

After a gentle stir, the sauce turns a creamy orange-pink with ribbons of ricotta throughout. The tortellini are plump and coated, and the kielbasa coins are visible. The dish is steaming and fragrant. It's ready to be served immediately, with the cheese stretching as you spoon it out.

Common mistakes

A common mistake is overcooking the tortellini, which makes them mushy. Stick to the recommended time and check early. Another issue is a watery sauce; this can happen if the marinara is too thin or if the slow cooker runs hot and creates condensation.

To avoid this, use a thick sauce and don't lift the lid too often. Also, resist the urge to stir during the first few hours, as that can break the tortellini and make the dish gummy.

How to tell it’s done

The dish is done when the tortellini are tender and have a slight bite, and the cheese is fully melted and bubbly. The sauce should be thick and creamy, not watery. To check, carefully lift a tortellini with a spoon and taste it.

If it is still firm in the center, cook for another 30 minutes. The internal temperature of the dish should be at least 165°F (74°C) if you want to be precise, but since all ingredients are cooked, it's mainly about texture.
