Before you start

Before starting, slice the kielbasa into 1/2-inch medallions and slice the mushrooms if not pre-sliced. Make sure the cream cheese is softened to room temperature so it melts more evenly.

Set out all the ingredients: tortellini, Alfredo sauce, and shredded mozzarella. No need to pre-cook anything; the slow cooker handles it all. Have a 6-quart slow cooker ready and a large spoon for stirring.

Ingredients at a glance (6)
  • 2 lb smoked kielbasa, sliced into medallions
  • 20 oz refrigerated spinach-and-cheese tortellini
  • 8 oz cremini mushrooms, sliced
  • 15 oz Alfredo sauce
  • 8 oz cream cheese, softened
  • 2 cups shredded whole-milk mozzarella

Instructions

Layer and Set

  1. Layer the Ingredients
Place the sliced kielbasa medallions into the bottom of a 6-quart slow cooker. Add the tortellini and sliced mushrooms on top. Pour the Alfredo sauce over everything, then place the block of cream cheese in the center of the mixture. Sprinkle the shredded mozzarella evenly over the top.
Look for The ingredients are layered in the crock, with the cream cheese block visible in the center.
Tip No need to stir at this point; the slow cooker will blend the flavors as it cooks.

You will see a colorful layer of kielbasa, tortellini, mushrooms, and sauce, with the cream cheese block sitting in the center and mozzarella sprinkled on top. The ingredients look neat and separate, but they will meld together as they cook. The cream cheese may look like a solid block, but that is expected at this stage.

Simmer and Melt

  1. Cook on Low
Cover the slow cooker and cook on low for 3 to 4 hours, until the tortellini are tender and the sauce is bubbly. Gently stir the mixture once after 2 hours to help the cream cheese melt and distribute evenly.
Look for The sauce is bubbling around the edges and the cheese is fully melted.
Tip Check at the 3-hour mark: tortellini should be al dente, not mushy.

After a couple of hours, the slow cooker will start to bubble gently around the edges. The cream cheese will soften and begin to melt into the sauce, and the mozzarella will disappear into the creamy mixture.

The kitchen will smell richly of garlic, cheese, and smoked sausage. The sauce will look slightly separated before stirring, but a gentle stir will bring it together.

Serve and Enjoy

  1. Serve Hot
Once the tortellini are cooked and the sauce is creamy, stir the mixture well. Serve hot directly from the slow cooker, or spoon onto plates. Garnish with extra mozzarella or fresh herbs if desired.
Look for The sauce is thick and creamy, and the cheese stretches when lifted.
Tip If the sauce seems too thick, stir in a splash of milk or chicken broth to loosen it.

The tortellini are tender and the sauce is thick and creamy, coating the pasta and sausage. The cheese stretches when you lift the spoon, and the top may have slightly golden spots. The dish is bubbling and steamy, ready to serve. Spoon it onto plates and watch the cheese pull with every scoop.

Common mistakes

One common mistake is cooking on high, which can cause the tortellini to become mushy and the sauce to separate. Always use low heat for the best texture. Another mistake is not stirring at least once, which can lead to the cream cheese not melting fully.

Be sure to stir gently after a couple of hours. Adding too much liquid can make the sauce thin, so avoid adding extra broth unless needed. Finally, don't overcook: check at the 3-hour mark.

How to tell it’s done

The dish is done when the tortellini are tender and cooked through, and the sauce is hot and bubbling around the edges. The cream cheese and mozzarella should be fully melted and incorporated into the sauce, creating a smooth, creamy texture.

If you insert a knife into a tortellini, it should slide through easily. The kielbasa should be heated through and slightly browned at the edges. Taste a piece of tortellini to ensure it is cooked to your liking.
