Tips for success
For the best texture, use a good-quality rigatoni that holds its shape during long cooking. Barilla or De Cecco are reliable choices.
If you prefer a spicier dish, use hot smoked sausage or add a teaspoon of red pepper flakes. The sauce can be customized—try adding a splash of balsamic vinegar or a pinch of sugar to balance acidity.
To make this even easier, you can assemble the ingredients in the slow cooker insert the night before, refrigerate, and then start cooking in the morning.
Just add 30 minutes to the cook time if starting from cold. Leftovers can be stored in the fridge for up to 4 days and reheated in the microwave or on the stovetop with a splash of water.
Variations
- Spicy Sausage: Substitute the smoked kielbasa with spicy andouille or hot Italian sausage for a kick. Add 1/2 teaspoon of red pepper flakes with the sauce for extra heat. The cooking time remains the same.
- Veggie-Packed: Add 2 cups of chopped bell peppers, zucchini, or mushrooms along with the sauce. They will soften during cooking and add nutrition. You may need a little extra sauce to cover the vegetables.
- Cheesy Herb: Mix 1 teaspoon of dried oregano and 1 teaspoon of dried basil into the sauce before cooking. Top with a blend of provolone and mozzarella for an extra-cheesy crust. Garnish with fresh basil after cooking.
- Creamy Tomato: Stir in 1/2 cup of heavy cream or half-and-half during the last 30 minutes of cooking for a creamier sauce. This adds richness and a velvety texture. Be sure to stir gently to combine.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat with a splash of water or broth to restore creaminess.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave or on the stovetop over medium heat, adding a splash of water or broth if needed, until hot and bubbly.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will absorb more sauce as it sits, so add a splash of water or broth when reheating to restore the creamy texture.
Reheat in the microwave in 30-second intervals or in a saucepan over medium heat until warmed through.
This recipe is ideal for meal prep. Assemble the dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low for 4-5 hours.
The cooking time may be slightly longer if starting cold. Alternatively, cook the full dish, let it cool, and refrigerate in portions for up to 4 days.
Serving ideas
Serve this hearty pasta as a main dish with a simple green salad and crusty bread to soak up the extra sauce. A sprinkle of fresh parsley or basil adds a pop of color and freshness, though it's optional. For a complete meal, pair with roasted vegetables or a side of garlic bread.
This dish is satisfying on its own, but you can also serve it as a side to grilled meats or as part of a buffet. It's a crowd-pleaser that appeals to both kids and adults. The leftovers taste even better the next day as the flavors meld further.

Slow Cooker Kielbasa Rigatoni with Provolone

Ingredients
- 2 lb smoked kielbasa, sliced diagonally into 1/2-inch pieces
- 1 lb rigatoni pasta
- 24 oz roasted garlic tomato basil sauce
- 1 cup whole-milk ricotta cheese
- 2 cups shredded provolone cheese
Instructions
- Place the sliced kielbasa in the bottom of a 6-quart slow cooker. Add the rigatoni and pour the tomato sauce over the top. Stir briefly to combine, ensuring the pasta is mostly submerged in the sauce.
- Spoon the ricotta in dollops over the top of the mixture. Sprinkle the shredded provolone evenly over the entire surface.
- Cover the slow cooker and cook on low for 4 hours, or until the pasta is tender and the sauce is bubbling. Do not lift the lid during cooking to maintain the temperature. Let it rest for 3 minutes before slicing.
- After 4 hours, check that the kielbasa has reached an internal temperature of 145°F (63°C). The kielbasa is already smoked, but this ensures it is heated through. Let it rest for 3 minutes before slicing.
- Stir the pasta gently to incorporate the melted cheese. Serve immediately, spooning the bubbling pasta onto plates or bowls.
