Tips for success
For the best texture, use a high-quality smoked kielbasa that is not too fatty. If you prefer a spicier dish, use hot smoked sausage or add a pinch of red pepper flakes.
The pasta will continue to absorb sauce as it sits, so if you’re planning leftovers, you may want to add a splash of milk or water when reheating.
To make the roasted red pepper sauce from scratch, blend two jars of drained roasted red peppers with one cup of heavy cream, a clove of garlic, and a teaspoon of smoked paprika until smooth. This sauce can be made ahead and stored in the refrigerator for up to three days.
Variations
- Spicy Sausage: Use hot Italian sausage or andouille instead of kielbasa for a spicier kick. Add a pinch of red pepper flakes with the sauce for extra heat.
- Veggie Add-Ins: Sauté sliced mushrooms, bell peppers, or onions and add them with the kielbasa for extra vegetables. You can also stir in a cup of frozen peas during the last 15 minutes.
- Cheesy Breadcrumb Topping: Before serving, sprinkle the top with a mixture of panko breadcrumbs and melted butter, then broil for 2-3 minutes until golden and crisp.
- Smoked Paprika Twist: Add a teaspoon of smoked paprika and a dash of liquid smoke to the sauce for an even deeper smoky flavor. This works especially well with mild kielbasa.

You can assemble the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.
You may need to add 30 minutes to the cooking time if starting from cold. Alternatively, cook the full dish, let it cool, and refrigerate for up to 3 days before reheating.
Serving ideas
Serve the kielbasa pasta hot, straight from the slow cooker or transferred to a large serving bowl.
It’s a complete meal on its own, but it pairs well with a simple green salad or crusty bread to soak up the sauce. For a lighter side, serve with steamed broccoli or roasted vegetables.
For a family-style dinner, place the slow cooker on the table and let everyone serve themselves. Top each portion with extra shredded mozzarella or a sprinkle of chopped parsley if desired. This dish is hearty and satisfying, perfect for a cozy weeknight meal.

Slow Cooker Kielbasa Pasta with Smoky Red Pepper Cream

Ingredients
- 2 lb smoked kielbasa, sliced diagonally into 1/2-inch medallions
- 1 lb medium conchiglie pasta shells
- 2 cups smoky roasted red bell pepper cream sauce
- 8 oz cream cheese, softened, cut into cubes
- 2 cups shredded whole-milk mozzarella
Instructions
- Place the sliced kielbasa medallions in the bottom of a 7-quart slow cooker in an even layer. Add the conchiglie pasta shells on top, then pour the smoky roasted red pepper cream sauce over the pasta, making sure it coats the shells. Place the cubed cream cheese in the center of the slow cooker, then sprinkle the shredded mozzarella evenly over the top. Do not stir. Let it rest for 3 minutes before slicing.
- Cover the slow cooker and cook on LOW for 4 hours, or until the pasta is tender and the sauce is bubbling around the edges. The kielbasa is already fully cooked, but it needs to reach an internal temperature of 160°F (71°C) for food safety. Do not lift the lid during the first 3 hours of cooking to keep the heat in. Let it rest for 3 minutes before slicing.
- Once the slow cooker is done, stir the mixture gently to combine the melted cream cheese and mozzarella into the sauce. Taste and adjust with salt and pepper if needed. Serve hot directly from the slow cooker or transfer to a warm serving bowl. Top with extra shredded mozzarella or fresh herbs if desired.
