Before you start

Before you begin, ensure your slow cooker is clean and the cord is accessible. Gather all your ingredients, including the smoked kielbasa and the coleslaw mix, so they are ready to be added to the pot in quick succession.

If you are using a pre-packaged coleslaw mix, double-check that it does not contain any dressing, as you only want the raw shredded vegetables.

Have your measuring spoons and cups ready to ensure you add the correct amount of ginger, garlic, and soy sauce without needing to pause during the assembly process.

Ingredients at a glance (5)
  • 1 lb smoked kielbasa, sliced into coins
  • 1 lb coleslaw mix (cabbage and carrot slaw)
  • 1 tsp ground ginger
  • 1 tsp garlic powder
  • 1/4 cup soy sauce

Instructions

Layering the ingredients

  1. Prepare the base
Place the sliced smoked kielbasa into the bottom of the slow cooker ceramic insert, ensuring the coins are spread out evenly in a single layer to begin the cooking process.
Look for The kielbasa should cover the bottom of the slow cooker insert evenly.
Tip Using a slow cooker with a removable insert makes cleanup much easier after the meal is finished.

The kielbasa should be arranged in an even layer at the bottom of the slow cooker, providing a stable foundation for the vegetables that will be added next. Ensure the slow cooker insert is dry before you begin to avoid any unnecessary splattering when you start adding the ingredients.

Seasoning the cabbage

  1. Add vegetables and seasonings
Scatter the coleslaw mix over the kielbasa coins. Evenly sprinkle the ground ginger and garlic powder over the top of the cabbage mixture, then pour the soy sauce over everything to provide moisture and flavor.
Look for The soy sauce will begin to pool slightly at the bottom, helping to steam the cabbage as it cooks.
Tip Distribute the spices evenly so every bite of cabbage is well-seasoned.

The coleslaw mix should be piled high on top of the kielbasa. After sprinkling the ginger and garlic and pouring the soy sauce, the ingredients should look ready for the slow cooking process. Ensure the soy sauce is drizzled as evenly as possible over the entire surface area.

Slow cooking for tenderness

  1. Cook and serve
Cover the slow cooker and cook on low for 4 hours until the cabbage is tender and the kielbasa is heated through to an internal temperature of at least 160°F (71°C).
Look for The cabbage should be wilted and soft, and the liquid at the bottom should be fragrant and dark.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Check the internal temperature of the kielbasa in the center of the largest piece to ensure it is thoroughly heated.

After four hours, the cabbage should be significantly reduced in volume and appear soft and wilted. The kielbasa coins should be plump and heated through. Before serving, give the mixture a gentle stir to incorporate the juices at the bottom with the cabbage throughout the bowl.

Common mistakes

A common mistake is overcrowding the slow cooker with too much liquid, which can lead to a watery dish. Since the cabbage releases a significant amount of water as it cooks, you do not need to add any extra broth or water.

Another mistake is using a kielbasa that is too lean, which can result in a drier final texture. Always ensure the lid is properly seated on the slow cooker to keep the steam inside, as this is essential for cooking the cabbage thoroughly.

How to tell it’s done

The dish is considered done when the cabbage has reached a tender, wilted texture and the kielbasa has reached an internal temperature of at least 160°F (71°C). When checking for doneness, ensure you insert your thermometer into the thickest part of a kielbasa coin to get an accurate reading.

The liquid at the bottom of the slow cooker should be bubbling slightly and have a deep, savory aroma. If the cabbage still has a raw crunch, allow it to continue cooking for another twenty minutes.

  • Ground meat: 160°F (71°C) in the thickest part

Coming up in Part 3: common questions
