Tips for success
For an even richer flavor, consider searing the ground beef in batches to get a deep crust on each piece. This extra step takes just a few minutes but adds a layer of complexity to the soup.
Also, if you have time, let the soup rest for 10 minutes after cooking before serving—this allows the flavors to settle and the soup to cool slightly.
To make the soup even heartier, serve it over cooked egg noodles or with a side of crusty bread for dipping. A sprinkle of fresh parsley or a dollop of sour cream on top can add a fresh, tangy contrast to the rich broth. Leftovers taste even better the next day, as the flavors continue to develop overnight.
Variations
- Add Mushrooms: Sauté 8 oz sliced mushrooms with the ground beef until they release their liquid and brown slightly. This adds an earthy depth to the soup that pairs beautifully with the beef broth.
- Spicy Kick: Add 1-2 diced jalapeños or a teaspoon of red pepper flakes along with the vegetables for a subtle heat. A dash of hot sauce at the end can also brighten the flavor.
- Herbed Version: Stir in 1 teaspoon dried thyme and 1 teaspoon dried rosemary with the bouillon granules. The herbs infuse the broth with a savory, aromatic note that elevates the whole dish.
- Vegetable Boost: Add 1 cup of frozen peas or green beans during the last 30 minutes of cooking. They add color and a pop of sweetness, making the soup even more nutritious and colorful.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a little broth or water if needed.
- Freezer
- Freeze in airtight containers or zip-top bags for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat on the stovetop over medium heat, stirring occasionally, until hot. Add a splash of broth or water to loosen the soup if it has thickened.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The soup will thicken as it cools; add a splash of beef broth or water when reheating to restore the desired consistency. Reheat gently on the stovetop or in the microwave until piping hot.
This soup is ideal for meal prep. Brown the beef and chop the vegetables the night before, then store them separately in the refrigerator.
In the morning, simply combine everything in the slow cooker and cook as directed. The soup also freezes well, so consider making a double batch to have on hand for busy nights.
Serving ideas
Serve the soup hot, ladled into deep bowls. It's satisfying on its own, but a slice of buttered sourdough or a side of saltine crackers makes it a complete meal.
For a touch of freshness, sprinkle with chopped parsley or chives just before serving. A light green salad with a simple vinaigrette would also pair nicely, balancing the richness of the broth.
This soup is perfect for lunch or dinner, and it's especially comforting on a cold day. The leftovers reheat well, making it a great option for packed lunches.
If you like a bit of heat, add a few dashes of hot sauce or a pinch of red pepper flakes when serving. The soup is hearty enough to be a main course, but it can also be served in smaller portions as a starter.
