Tips for success
For the best texture, cut the pork and vegetables into uniform bite-size pieces. This ensures they cook at the same rate, so nothing is over- or underdone.
If you have time, letting the curry sit on warm for an extra 30 minutes after cooking can deepen the flavors even more. Just be careful not to overcook the vegetables—they should be tender but not mushy.
If you prefer a thicker sauce, you can whisk a tablespoon of cornstarch with a little cold water and stir it into the curry during the last 30 minutes of cooking.
For a thinner sauce, add a splash of broth or water at the end. Taste and adjust seasoning if needed—some curry roux brands are saltier than others, so you might want to add a pinch of salt or a dash of soy sauce.
Variations
- Chicken Curry: Swap the pork for boneless, skinless chicken thighs. Cook on low for 6-7 hours, or until the chicken is tender and cooked through (165°F/74°C). The sauce will be slightly lighter but just as delicious.
- Vegetable Curry: For a vegetarian version, replace the pork with extra vegetables like mushrooms, zucchini, or bell peppers. Use vegetable broth instead of chicken broth. Reduce cooking time to 4-5 hours on low, or until vegetables are tender.
- Spicy Curry: If you like heat, add a teaspoon of chili powder or a chopped fresh chili when adding the curry roux. You can also use a spicier variety of curry roux, which is often labeled 'hot' or 'extra hot.'
- Apple and Honey: For a touch of sweetness, add a grated apple and a tablespoon of honey along with the broth. This is a common twist in some Japanese curry recipes and adds a subtle fruity depth.
Storage and make-ahead
- Fridge
- Store leftover curry in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth or water if needed.
- Freezer
- Freeze the cooled curry in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Add a little broth or water to loosen the sauce if it has thickened.
Leftover curry can be stored in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, and it often tastes even better the next day.
Reheat gently on the stovetop or in the microwave, adding a little broth or water if the sauce has thickened too much. The curry can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating.
This recipe is perfect for meal prep. You can assemble all the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.
If you're short on time, you can also cook the curry a day ahead and reheat it for dinner. The flavors actually improve after a day in the fridge.
Serving ideas
Serve the Japanese curry over steamed short-grain or medium-grain rice for the classic experience. The rice soaks up the rich sauce, balancing the bold spices. You can also serve it with pickled ginger or fukujinzuke (Japanese pickled vegetables) for a tangy contrast. A simple side salad with a light vinaigrette adds freshness to the meal.
For a heartier meal, add a soft-boiled egg on top or serve with a side of Japanese potato salad. The curry is also delicious with a sprinkle of sliced scallions or a drizzle of tonkatsu sauce. If you have leftovers, use them as a filling for curry buns or over udon noodles. This versatile dish is as satisfying as it is easy.

Slow Cooker Japanese Curry Pork

Ingredients
- 2 lb pork loin, cut into bite-size cubes
- 3 cups potatoes, peeled and cut into chunks
- 2 cups carrots, peeled and cut into chunks
- 1 box Japanese curry roux (about 7 oz)
- 4 cups chicken broth
Instructions
- Place the pork cubes in the bottom of the slow cooker. Add the potato chunks and carrot chunks on top. Break the curry roux into pieces and scatter them over the vegetables.
- Pour the chicken broth over everything in the slow cooker. Do not stir; the broth will help dissolve the roux as it cooks.
- Cover the slow cooker and cook on low for 8 hours, or on high for 4 hours, until the pork is tender and the vegetables are soft. Stir gently once halfway through, if possible. Let it rest for 3 minutes before slicing.
- After the cooking time, check that the pork is fork-tender and has reached an internal temperature of at least 145°F (63°C). Let the pork rest for at least 3 minutes before serving.
- Spoon the curry over steamed rice or serve as is. The sauce should coat the back of a spoon. Enjoy the tender pork and vegetables in every bite.
