Tips for success

For a deeper flavor profile, you can sear the pork shoulder in a hot pan with a little oil before placing it in the slow cooker.

While this is an optional step, it helps to develop a nice crust on the exterior, which adds an extra layer of complexity to the final shredded dish. If you choose to sear, ensure the pan is very hot and brown all sides evenly.

If you find the sauce is too thick after shredding, you can stir in a tablespoon of milk or heavy cream to loosen it up.

Conversely, if the sauce is too thin, you can continue to cook the shredded mixture on high with the lid off for about 10 to 15 minutes to allow some of the liquid to evaporate, which will concentrate the flavors and thicken the consistency.

Variations

  • Smoky BBQ Pulled Pork: Replace half of the ranch seasoning with your favorite smoky barbecue rub and stir in a half-cup of barbecue sauce before serving for a classic, tangy finish.
  • Extra Spicy Jalapeno: Include the seeds and membranes of the jalapenos when dicing, and add a dash of your favorite hot sauce to the slow cooker to turn up the heat.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Freezer
Freeze in a freezer-safe bag for up to 2 months.
Reheat
Thaw overnight in the fridge and reheat on the stovetop over low heat until steaming hot.

Allow any leftovers to cool to room temperature for no more than two hours before transferring them to an airtight container. This prevents the growth of bacteria and keeps the meat fresh.

When stored properly in the refrigerator, the pulled pork will maintain its quality for up to three days. Ensure the container is sealed tightly to prevent the pork from absorbing other odors in your fridge.

This recipe is excellent for making ahead of time. You can cook the pork fully, shred it, and store it in the refrigerator. When you are ready to serve, simply reheat the meat gently on the stovetop or in the microwave.

The flavors often improve after sitting for a day, making this an even better option for meal planning or preparing for upcoming events or busy weeknights.

Serving ideas

Serve the pulled pork on toasted slider rolls to add a pleasant crunch that contrasts with the tender meat. You can lightly butter the inside of the rolls and toast them in a pan for a few minutes until golden brown. This small detail elevates the entire experience and prevents the rolls from becoming soggy when topped with the rich, creamy pork mixture.

Accompany these sliders with a crisp, acidic side dish to balance the richness of the cream cheese. A simple coleslaw with a vinegar-based dressing or a side of pickled red onions provides the perfect sharp contrast to the savory pork. These sides help to cleanse the palate between bites, making each slider taste as fresh and exciting as the first one.

Frequently asked questions

Can this be made in a pressure cooker?
Yes, this recipe can be adapted for a pressure cooker. Simply add the ingredients as directed and cook on high pressure for about 60 minutes, followed by a natural pressure release. Adjust the liquid amount if necessary to ensure the pressure cooker reaches full pressure correctly.
What is the best way to keep the sliders from getting soggy?
To prevent soggy sliders, toast the inside of the rolls with a little butter before adding the pork. Additionally, try to drain off any excess liquid from the shredded pork before assembling the sliders. Serving the pork immediately after assembly also ensures the buns stay perfectly textured.
Can the cream cheese be substituted?
While cream cheese is essential for the signature texture of this recipe, you can substitute it with an equal amount of softened goat cheese for a tangier flavor, or use a combination of sour cream and shredded cheddar if you prefer a different cheesy profile. Note that these changes will alter the final consistency.

Ingredients

  • 3 lb pork shoulder, trimmed of excess fat
  • 3 whole jalapenos, diced
  • 1 packet ranch seasoning
  • 8 oz cream cheese, cubed
  • 8 count slider rolls, for serving

Instructions

  1. Place the pork shoulder into the base of the slow cooker. Scatter the diced jalapenos evenly over the top of the meat. Sprinkle the packet of ranch seasoning over the jalapenos and pork, ensuring even coverage for maximum flavor distribution.
  2. Place the cubed cream cheese directly on top of the seasoned pork. Cover the slow cooker with its lid. Cook on low heat for 8 hours or high heat for 4 hours until the pork is extremely tender and shreds easily with a fork.
  3. Once the pork reaches an internal temperature of 145°F (63°C), remove the pork from the slow cooker to a cutting board. Let it rest for at least 3 minutes. Shred the meat using two forks, then return it to the slow cooker and toss thoroughly with the melted cream cheese mixture. Serve warm on slider rolls.
