Before you start

Before you start, cut the chicken breasts into uniform bite-sized cubes so they cook evenly. Drain the pineapple tidbits well, pressing out any excess liquid. Slice the jalapeño into thin rings, removing the seeds if you prefer less heat.

Measure out the bourbon BBQ glaze and brown sugar. Have your slow cooker ready and plugged in. You don't need to preheat or grease it—just place the ingredients in as directed.

Ingredients at a glance (5)
  • 2 lb boneless skinless chicken breasts, cut into bite-sized cubes
  • 1 cup pineapple tidbits, drained
  • 1 medium jalapeño, sliced into rings
  • 1/2 cup bourbon BBQ glaze
  • 1/4 cup packed dark brown sugar

Instructions

Layer and Set

  1. Layer the Ingredients
Place the cubed chicken breasts in the bottom of the slow cooker in an even layer. Scatter the drained pineapple tidbits over the chicken, then arrange the jalapeño rings on top. Pour the bourbon BBQ glaze evenly over the entire surface, and sprinkle with the brown sugar. Do not stir.
Look for The chicken is covered with pineapple, jalapeño, glaze, and brown sugar in distinct layers.
Tip Keeping the brown sugar on top helps it caramelize as the slow cooker heats.

At the start, the slow cooker holds distinct layers: chicken on the bottom, pineapple and jalapeño on top, then the glaze and brown sugar. The brown sugar forms a sandy crust that will melt as the slow cooker warms. The raw chicken is pale pink and cool. Everything looks neat and separated, ready to transform.

Slow Cook and Caramelize

  1. Slow Cook Until Tender
Cover the slow cooker and cook on LOW for 4 hours, or on HIGH for 2 1/2 hours, until the chicken is cooked through and tender. The chicken is done when it reaches an internal temperature of 165°F (74°C) measured with an instant-read thermometer. The sauce will be bubbling and slightly thickened.
Look for The sauce is bubbling around the edges and the chicken is opaque and tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during cooking to keep the heat steady.

After a few hours, the slow cooker is bubbling gently around the edges. The sauce has turned a deep amber-brown and thickened as the brown sugar dissolves.

The chicken is cooked through and tender, and the pineapple has softened. The kitchen smells sweet and smoky. The jalapeño rings are slightly wilted but still bright green.

Stir and Serve

  1. Serve the Glazed Bites
Gently stir the cooked chicken to coat every piece with the glossy bourbon glaze. Serve hot over creamy mashed potatoes or rice, spooning extra sauce from the slow cooker over the top.
Look for The chicken is glistening with thick, caramelized sauce and the pineapple is translucent.
Tip For a thicker sauce, simmer it in a skillet for a few minutes after removing the chicken.

Once stirred, every piece of chicken is coated in a glossy, sticky glaze. The sauce is thick enough to cling to the back of a spoon. The pineapple is caramelized and sweet, and the jalapeño adds a gentle heat. Served over mashed potatoes, the dish looks rustic and inviting, with steam rising and a rich sheen.

Common mistakes

One common mistake is lifting the lid to peek, which lets heat escape and extends cooking time. Another is using a watery BBQ sauce, which can make the dish too thin—look for a thick glaze. Overcooking can dry out the chicken, so check the temperature early.

Adding too many jalapeño seeds can make it overly spicy; remove them if you prefer mild heat. Finally, resist the urge to stir too much during cooking, as it can break up the chicken and make the sauce cloudy.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) on an instant-read thermometer. The meat should be opaque and tender enough to shred with a fork. The sauce should be bubbling and slightly thickened, clinging to the chicken and pineapple.

If the sauce seems too thin, let it cook uncovered for an additional 15–20 minutes to reduce. The pineapple should be soft and translucent, and the jalapeño rings will be tender but still hold their shape.

  • Poultry: 165°F (74°C) in the thickest part
