Before you start
Before starting, cut the top sirloin into 1-inch cubes and pat them dry. Mince the garlic and measure the honey, Sriracha, and soy sauce. Cut the butter into small pieces so it melts quickly. Have the coconut rice cooked and warm for serving. No need to sear the beef — the slow cooker does all the work.
Ingredients at a glance (9)
- 3 lb top sirloin, cut into 1-inch cubes
- 1/2 cup raw wildflower honey
- 1/4 cup Sriracha chili sauce
- 1/4 cup soy sauce
- 8 cloves garlic, minced
- 1 stick salted butter, cut into pieces
- Coconut rice, cooked, for serving
- Sliced scallions, for serving
- Sesame seeds, for serving
Instructions
Layer and Cook Low
- Layer the IngredientsPlace the cubed top sirloin in the slow cooker. Add the honey, Sriracha, soy sauce, minced garlic, and pieces of salted butter. Stir with a wooden spoon until the beef is evenly coated with the sauce and butter.Look for The beef cubes are glossy with a reddish-orange sauce; butter pieces are distributed throughout.Tip Cut the beef into uniform 1-inch cubes so they cook evenly.
- Cover and Cook LowCover the slow cooker with the lid and set to LOW. Cook for 5 hours without opening the lid. The beef will release juices and become tender as it simmers in the honey-Sriracha butter sauce. Let it rest for 3 minutes before slicing.Look for After 5 hours, the beef is fork-tender and the sauce is bubbling gently around the edges.Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)Tip Resist lifting the lid during cooking; each opening adds 20 minutes of cook time.
After layering the beef with honey, Sriracha, soy, garlic, and butter, the slow cooker is filled with a reddish-orange sauce and visible butter pieces.
As it cooks on LOW, the aroma becomes sweet and spicy. At the end of 5 hours, the beef should be fork-tender and the sauce bubbling gently. Check that the beef is easily pierced before moving on.
Thicken the Glaze
- Thicken the GlazeAfter 5 hours, remove the lid. Use a slotted spoon to transfer the beef to a plate, leaving the sauce in the slow cooker. Turn the slow cooker to HIGH. Let the sauce bubble uncovered for 15–20 minutes, stirring occasionally, until it thickens to a syrupy glaze that coats the back of a spoon. Let it rest for 3 minutes before slicing.Look for The sauce has reduced by about a third and is glossy and thick enough to cling to the spoon.Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)Tip If the sauce is still thin, continue simmering on HIGH in 5-minute increments.
- Return Beef to GlazeReturn the beef to the slow cooker and stir to coat each piece with the thickened glaze. Let the beef sit in the warm glaze for 5 minutes so it absorbs the flavor. The glaze should cling to the beef like candy. Let it rest for 3 minutes before slicing.Look for Each steak bite is coated in a shiny, sticky red-brown glaze.Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)Tip Stir gently to avoid breaking the tender beef cubes.
After removing the beef, the sauce simmers on HIGH and reduces to a glossy, syrupy glaze. It should be thick enough to coat the back of a spoon and smell intensely of honey and chili.
The color deepens to a rich red-brown. Stir occasionally to prevent sticking. When the glaze is ready, return the beef and coat each piece.
Rest and Serve
- Rest the Steak BitesRemove the slow cooker insert from the base and let the steak bites rest for at least 3 minutes. This allows the juices to redistribute and the glaze to set slightly. The internal temperature of the beef should be at least 145°F (63°C).Look for The beef is moist and the glaze is set but still glossy.Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)Tip Resting keeps the beef from drying out when you spoon it over rice.
- Serve Over Coconut RiceSpoon the honey Sriracha steak bites and extra glaze over hot coconut rice. Top with sliced scallions and sesame seeds. Serve immediately.Look for The rice absorbs the glossy sauce, and the scallions and sesame add freshness and crunch.Tip Warm the rice just before serving so the glaze stays fluid.
After resting, the steak bites are shiny with a sticky glaze that clings to each cube. The beef is moist and tender. When spooned over coconut rice, the glaze pools slightly and soaks into the grains. Scallions and sesame add freshness and crunch. The dish looks glossy and inviting, with a sweet-spicy aroma.
Common mistakes
One common mistake is lifting the lid during the 5-hour cook, which lets heat escape and extends the cooking time. Another is skipping the sauce reduction — without it, the sauce stays thin and won't coat the beef.
Also, don't cut the beef too small or it can overcook and dry out. Finally, always rest the beef after cooking so the juices settle back into the meat.
How to tell it’s done
The steak bites are done when they are fork-tender and the internal temperature reaches at least 145°F (63°C) for whole-cut beef. After resting, the meat should be moist and easily pierced with a fork.
The glaze is ready when it coats the back of a spoon and clings to the beef like a sticky syrup. Let the beef rest at least 3 minutes before serving.
- Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
