Before you start

Before you start, pat the chicken drumsticks dry with paper towels. This helps the sauce cling better. Slice the onions thinly and mince the garlic. Measure out the honey and soy sauce.

If the honey is crystallized, warm it briefly in the microwave. Have a 6-quart slow cooker ready. No need to preheat it; just place the ingredients inside.

Ingredients at a glance (6)
  • 8 chicken drumsticks
  • 2 large Vidalia onions, thinly sliced
  • 4 cloves garlic, minced
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 2 cups cooked basmati rice, for serving

Instructions

Prep and Assemble

  1. Prepare the Chicken and Aromatics
Place the chicken drumsticks in the slow cooker insert, arranging them in a single layer as much as possible. Scatter the sliced Vidalia onions over the top, then add the minced garlic, spreading it evenly.
Look for The drumsticks should be nestled in the onions and garlic, with the onions covering the chicken partially.
Tip For the best flavor, use a sweet onion variety. If Vidalia onions are not available, any sweet onion will work.
  2. Mix the Sauce
In a small bowl, whisk together the honey and soy sauce until well combined. Pour the mixture evenly over the chicken and onions.
Look for The sauce should coat the chicken and onions evenly, with some pooling at the bottom.
Tip Use a measuring cup with a spout for easy pouring. If the honey is too thick, warm it slightly to make it pourable.

You should have a slow cooker filled with chicken, onions, garlic, and a honey-soy sauce mixture. The onions should be scattered evenly, and the sauce should coat the chicken. The slow cooker is not yet turned on.

Slow-Cook to Tender

  1. Slow-Cook the Chicken
Cover the slow cooker and cook on low for 4 hours, or until the chicken is tender and cooked through. The chicken should be fall-off-the-bone tender and the onions should be caramelized.
Look for The chicken should be very tender, and the sauce should be bubbling gently. The onions should be soft and translucent.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not lift the lid during cooking, as this releases heat and extends the cooking time. If you prefer a thicker sauce, remove the chicken and simmer the sauce on the stovetop after cooking.

After 4 hours on low, the kitchen should smell sweet and savory. The chicken will be very tender, and the sauce will be bubbling. The onions will have softened and turned a deep golden color. The chicken should easily pull away from the bone.

Serve and Enjoy

  1. Serve Over Rice
Using a slotted spoon, transfer the chicken and onions to a serving platter. Serve hot over cooked basmati rice, spooning some of the sauce over the top.
Look for The chicken should be glistening with sauce, and the onions should be soft and caramelized.
Tip For a neat presentation, place a mound of rice on each plate and arrange the chicken on top. Spoon extra sauce over the chicken before serving.

The chicken is plated on a bed of rice, with the caramelized onions spooned over the top. The sauce should be glossy and sticky. The dish looks and smells like a comforting, homey dinner.

Common mistakes

One common mistake is lifting the lid to check on the chicken. Every time you open the slow cooker, heat escapes and adds to the cooking time. Trust the process and leave the lid on.

Another mistake is using chicken with skin on; the skin can become rubbery in the slow cooker.

If you use skin-on drumsticks, you may want to remove the skin before serving or sear them first to render some fat. Also, do not skip the onions—they are essential for the sauce.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part, but you will know it is ready when the meat is so tender it falls off the bone.

The onions should be soft and translucent, and the sauce should be bubbling and slightly thickened. If you like a thicker glaze, transfer the chicken to a plate and simmer the sauce on the stovetop for a few minutes to reduce.

  • Poultry: 165°F (74°C) in the thickest part
