Tips for success
For the most flavorful results, use a BBQ sauce that you love—it's the star of the dish. If you have time, you can make your own hickory BBQ sauce from scratch, but a store-bought version works just as well.
To add extra depth, stir in a tablespoon of Worcestershire sauce or a splash of apple cider vinegar before cooking.
This recipe is endlessly adaptable. Try using chicken thighs instead of drumsticks, or add sliced carrots or potatoes to the slow cooker for a more substantial meal.
If you prefer a spicier dish, use a spicy BBQ sauce or add a chopped jalapeño. The possibilities are endless, and the slow cooker makes it easy to experiment.
Variations
- Spicy Kick: Add 1-2 chopped jalapeños or a teaspoon of red pepper flakes to the slow cooker along with the vegetables. Use a spicy BBQ sauce or stir in a tablespoon of hot sauce for extra heat.
- Honey Garlic: Replace the hickory BBQ sauce with a mixture of 1/2 cup honey, 1/4 cup soy sauce, 4 minced garlic cloves, and 2 tablespoons ketchup. Cook as directed for a sweet and savory twist.
- Citrus BBQ: Stir the zest and juice of one orange into the BBQ sauce before pouring over the chicken. The citrus brightens the flavor and adds a subtle sweetness that pairs well with the smoky sauce.
- Smoky Chipotle: Add 1-2 chipotle peppers in adobo sauce, minced, to the BBQ sauce. This adds a deep, smoky heat that elevates the dish. Serve with extra adobo sauce on the side.

Serving ideas
Serve the chicken drumsticks over a bed of steamed jasmine rice, spooning the peppers and sauce generously over the top. The rice soaks up the flavorful sauce, making every bite satisfying. A side of coleslaw or a simple green salad adds a fresh contrast to the rich, smoky flavors.
This dish also works well for casual entertaining. Set up a buffet with the slow cooker in the center, and let guests serve themselves. Provide extra BBQ sauce on the side for those who like it saucy. Cornbread or crusty bread are great for sopping up any remaining sauce.

Slow Cooker Hickory BBQ Chicken Drumsticks

Ingredients
- 8 chicken drumsticks (about 2 1/2 lb)
- 3 bell peppers (red, yellow, green), sliced
- 1 sweet onion, cut into wedges
- 1 1/2 cups hickory brown-sugar BBQ sauce
Instructions
- Place the chicken drumsticks in the bottom of a 6-quart slow cooker, arranging them in a single layer if possible. Scatter the sliced bell peppers and onion wedges over the chicken.
- Pour the hickory BBQ sauce evenly over the chicken and vegetables. Use a spoon or spatula to gently coat everything, ensuring the sauce reaches the bottom of the pot.
- Cover the slow cooker and cook on low for 4 to 5 hours, or until the chicken is tender and cooked through. The chicken should reach an internal temperature of 165°F (74°C) when checked with an instant-read thermometer inserted into the thickest part without touching bone.
- After 4 hours, check the chicken. The meat should be pulling away from the bone and the sauce should be thick and glossy. If the chicken is not yet fall-off-the-bone, continue cooking for another 30 minutes to 1 hour.
- Serve the chicken and peppers over steamed jasmine rice, spooning extra sauce from the slow cooker over the top.
