Tips for success
For an extra layer of flavor, sear the drumsticks in a hot skillet with a little oil before adding them to the slow cooker. This isn't necessary, but it adds a nice browned crust and deeper savory notes.
If you do sear them, you might reduce the cooking time by 30 minutes since the chicken gets a head start. Just remember to still check the internal temperature.
If you prefer a thicker, more concentrated sauce, remove the chicken after it's cooked and set it aside. Then, transfer the sauce to a saucepan and simmer over medium heat for 5-10 minutes until it reduces and thickens.
Spoon the reduced sauce over the chicken before serving. This is a great trick for when you want a more intense BBQ flavor without extra ingredients.
Variations
- Spicy Chipotle BBQ: Add 2 chopped chipotle peppers in adobo sauce along with the BBQ sauce for a smoky, spicy kick. Reduce the BBQ sauce to 1 1/4 cups to keep the consistency balanced.
- Honey Garlic BBQ: Stir 2 tablespoons of honey and 1 teaspoon of garlic powder into the BBQ sauce before pouring over the chicken. This adds extra sweetness and a savory garlic note.
- Pineapple BBQ: Add 1 cup of pineapple chunks (fresh or canned) on top of the onions. The pineapple will infuse the sauce with tropical sweetness and pair beautifully with the smoky hickory flavor.
- Smoky Bacon BBQ: Cook 4 slices of bacon until crisp, crumble, and sprinkle over the chicken before serving. The bacon adds a salty, smoky crunch that complements the tender chicken.
Storage and make-ahead
- Fridge
- Store leftover chicken in an airtight container in the refrigerator for up to 3 days. The sauce will thicken; add a splash of water when reheating.
- Freezer
- Freeze cooked chicken in a freezer-safe container for up to 2 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat in the microwave for 2-3 minutes or in a saucepan over medium heat until hot. Add a little water or BBQ sauce to restore saucy texture.
Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days. The sauce will thicken as it cools, so you may want to add a splash of water or extra BBQ sauce when reheating to loosen it. Reheat gently in the microwave or on the stovetop until heated through. The chicken will remain tender and juicy.
This recipe is perfect for meal prep. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, simply place the insert into the slow cooker base and turn it on.
If you're short on time, you can also cook the full recipe, let it cool, and store it in the fridge for up to 3 days. Reheat individual portions as needed.
Serving ideas
Serve these BBQ chicken drumsticks over steamed jasmine rice or fluffy white rice to soak up the delicious sauce. The rice provides a neutral base that lets the sweet and smoky flavors shine. You can also serve with coleslaw, cornbread, or a simple green salad for a complete meal. For a low-carb option, try cauliflower rice or roasted vegetables.
This dish is also great for gatherings—just set up a platter with the chicken and let guests help themselves. The drumsticks are easy to eat with your hands, making them perfect for casual dinners or game-day spreads.
Garnish with chopped scallions or fresh parsley for a pop of color, if desired. The leftovers are just as tasty served cold or reheated.

Slow-Cooker Hickory BBQ Chicken Drumsticks

Ingredients
- 8 chicken drumsticks (about 2 1/2 lb)
- 2 medium Vidalia onions, thinly sliced
- 4 cloves garlic, minced
- 1 1/2 cups hickory brown-sugar BBQ sauce
Instructions
- Place the chicken drumsticks in the bottom of a 6-quart slow cooker, arranging them in a single layer or slightly overlapping if needed. They don't need to be perfect—just evenly distributed so they cook uniformly.
- Scatter the sliced Vidalia onions over the chicken, then add the minced garlic on top. The onions will soften and caramelize as they cook, adding sweetness to the sauce.
- Pour the hickory BBQ sauce evenly over the chicken and onions. Use a spoon or spatula to spread it slightly, making sure most of the chicken is coated, but don't stir—the sauce will meld during cooking.
- Cover the slow cooker and cook on low for 4 hours, or until the chicken is tender and reaches an internal temperature of 165°F (74°C). The sauce will bubble gently and the onions will soften into a sweet, jammy mixture.
- After 4 hours, use an instant-read thermometer to check the thickest part of a drumstick, avoiding the bone. It should read at least 165°F (74°C). The meat should be pulling away from the bone and feel very tender when pierced with a fork.
- Spoon steamed jasmine rice onto plates, then use tongs to lift the drumsticks out of the slow cooker, letting excess sauce drip back. Place the chicken on the rice and spoon extra onions and sauce over the top.
