Tips for success
For the most flavorful sauce, choose a BBQ sauce with a balance of sweet and smoky notes—brown sugar and hickory are ideal. If your sauce is too tangy, add a teaspoon of honey or brown sugar before cooking.
If it's too sweet, a splash of apple cider vinegar can brighten it. Taste the sauce before pouring it over the chicken and adjust to your preference.
To make the chicken extra sticky, after it's cooked, transfer the drumsticks to a baking sheet and broil for 2–3 minutes until the sauce caramelizes. Keep a close eye on them, as the sugar can burn quickly.
This step is optional but adds a nice charred flavor. If you do this, let the chicken rest for a few minutes before serving, and remember to let any leftovers cool before refrigerating.
Variations
- Spicy Kick: Add 1–2 minced chipotle peppers in adobo sauce or a teaspoon of cayenne pepper to the BBQ sauce before pouring over the chicken. The heat balances the sweetness and adds a smoky depth.
- Honey Garlic: Swap half of the BBQ sauce for honey and add 2 tablespoons of soy sauce and 1 teaspoon of grated fresh ginger. This creates a sweeter, more Asian-inspired glaze that pairs beautifully with the garlic.
- Smoky Bourbon: Stir in 2 tablespoons of bourbon or whiskey and 1 teaspoon of liquid smoke to the BBQ sauce. The alcohol cooks off, leaving behind a rich, smoky flavor that complements the hickory notes.
- Lemon Herb: Add the zest and juice of one lemon, along with a tablespoon of fresh thyme leaves, to the sauce. This brightens the dish and cuts through the richness, making it perfect for spring.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days. Reheat gently, adding a splash of water or broth if the sauce has thickened too much.
- Freezer
- Freeze the cooked chicken and sauce in a freezer-safe container for up to 3 months.
- Reheat
- Reheat in a covered skillet over medium-low heat, stirring occasionally, until heated through.
Store leftover chicken and sauce in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of water or chicken broth if needed to loosen it.
The garlic cloves will keep their soft texture and can be mashed into the sauce or spread on bread.
You can assemble the entire dish up to 24 hours in advance: place the drumsticks, garlic, scallions, and BBQ sauce in the slow cooker insert, cover, and refrigerate.
When ready to cook, place the insert in the slow cooker and cook as directed—just add about 30 minutes to the cooking time since you're starting from cold.
Serving ideas
Serve the drumsticks over steamed jasmine rice or your favorite grain, with plenty of sauce spooned on top. The soft garlic cloves are a delicious bonus—smash them into the rice or spread on crusty bread. A simple green salad or steamed vegetables on the side adds freshness and balances the richness of the BBQ sauce.
For a casual meal, serve the chicken straight from the slow cooker with a pile of napkins and a side of coleslaw. The sauce is sticky and sweet, so have extra sauce on hand for dipping. If you have leftovers, shred the chicken and use it in sandwiches, tacos, or over a baked potato. This recipe is as versatile as it is easy.

Slow-Cooker Hickory BBQ Chicken Drumsticks

Ingredients
- 8 chicken drumsticks
- 12 whole garlic cloves, peeled
- 4 scallions, sliced
- 1 1/2 cups hickory brown-sugar BBQ sauce
Instructions
- Place the chicken drumsticks in the bottom of a 6-quart slow cooker, arranging them in a single layer or slightly overlapping. They should fit snugly in a circle, with the meaty ends facing outward.
- Scatter the whole garlic cloves and sliced scallions over the chicken, distributing them evenly so they fall between and on top of the drumsticks.
- Pour the hickory BBQ sauce over the chicken, garlic, and scallions. Use a spoon or spatula to gently spread the sauce so it coats the drumsticks and drips down between them.
- Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2 1/2 to 3 hours, until the chicken is fork-tender and reaches an internal temperature of 165°F (74°C) in the thickest part, away from the bone.
- Once the chicken is cooked through, use a spoon to scoop some of the bubbling sauce from the bottom of the slow cooker and drizzle it over the drumsticks. This helps the glaze cling to the meat.
- Spoon steamed jasmine rice onto a plate, then arrange the drumsticks and the soft garlic cloves on top. Drizzle with extra sauce from the slow cooker and sprinkle with fresh scallions if desired.
