Tips for success
For the best flavor, choose a high-quality hickory BBQ sauce with brown sugar as a prominent ingredient. This gives the dish its signature sweet-and-smoky depth.
If you like a little heat, add a pinch of cayenne or a few dashes of hot sauce to the slow cooker before cooking. You can also stir in some smoked paprika for extra smokiness.
To make this a complete meal in one pot, you can add a cup of uncooked rice to the slow cooker along with 2 cups of chicken broth, but you'll need to adjust the cooking time and liquid ratio.
Alternatively, serve the chicken over mashed potatoes, noodles, or with a side of coleslaw. The leftovers are fantastic in sandwiches or tacos.
Variations
- Spicy Chipotle: Use chipotle BBQ sauce and add 1-2 minced chipotle peppers in adobo. This adds a smoky heat that pairs well with the sweet peppers. Serve with cooling crema or sour cream.
- Honey Garlic: Swap the hickory sauce for a honey garlic BBQ sauce. Add 2 cloves of minced garlic to the slow cooker. The result is sweeter and more savory, perfect for those who prefer a milder flavor.
- Pineapple BBQ: Add 1 cup of pineapple chunks (drained) along with the peppers. The pineapple adds a tropical sweetness that complements the smoky sauce. Use a teriyaki BBQ sauce for an Asian twist.
- Vegetarian Version: Replace the chicken with 2 pounds of extra-firm tofu, cubed, or a mix of portobello mushrooms and chickpeas. Reduce the cooking time to 2 hours on low, as tofu and mushrooms cook faster.
Storage and make-ahead

- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through. Add a tablespoon of water or broth if the sauce is too thick.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight. Reheat gently in the microwave or on the stovetop with a splash of water or broth to loosen the sauce. The dish also freezes well for up to 3 months.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low as directed. You may need to add 30 minutes to the cooking time since the ingredients will be cold.
Serving ideas
Spoon the chicken and peppers over steamed jasmine rice for a classic presentation. The rice soaks up the extra BBQ sauce, making every bite satisfying.
For a low-carb option, serve over cauliflower rice or alongside a crisp green salad. The dish also works well in warm corn tortillas as tacos, topped with a little slaw.
Garnish with chopped fresh cilantro or sliced green onions for a pop of color and freshness, if desired.
A side of pickles or pickled onions adds a nice tangy contrast to the sweet-smoky chicken. This is a versatile dish that can be dressed up or down depending on the occasion.

Slow-Cooker Hickory BBQ Chicken Bites with Bell Peppers

Ingredients
- 2 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 3 bell peppers (red, yellow, green), sliced
- 1 medium sweet onion, cut into wedges
- 2 cups hickory brown sugar BBQ sauce
Instructions
- Place the cubed chicken breasts in an even layer at the bottom of the slow cooker. Scatter the sliced bell peppers and onion wedges over the chicken, spreading them out so they cover the surface.
- Pour the hickory BBQ sauce evenly over the chicken and vegetables. Use a spoon or spatula to gently spread the sauce so it coats the top of the ingredients, but do not stir.
- Cover the slow cooker and cook on low for 4 hours, or until the chicken is cooked through and tender. Do not lift the lid during cooking to keep the heat steady.
- After 4 hours, check that the chicken has reached an internal temperature of 165°F (74°C) using an instant-read thermometer. The chicken should be fork-tender and easily shred or cut with a spoon.
- Spoon the chicken and peppers over steamed white jasmine rice. Use a slotted spoon to serve, then drizzle extra sauce from the slow cooker over the top.
