Before you start

Before starting, cut the cream cheese into several pieces so it melts more evenly. Mince the garlic and measure out the spices. If using fresh chiles, roast and dice them ahead of time.

The slow cooker insert should be clean and ready. No need to preheat the slow cooker; just add the ingredients in the order listed.

Ingredients at a glance (9)
  • 3 lb boneless, skinless chicken breasts
  • 2 cups roasted diced Hatch green chiles
  • 8 oz cream cheese, softened
  • 1 tbsp ground cumin
  • 3 cloves garlic, minced
  • 1 1/2 cups shredded Pepper Jack cheese
  • warm flour tortillas, for serving
  • crispy tater tots, for serving
  • fresh cilantro, chopped, for serving

Instructions

Layer and Slow-Cook

  1. Layer the Ingredients
Place the chicken breasts in the bottom of a 6-quart slow cooker. Sprinkle the ground cumin and minced garlic over the chicken. Add the roasted diced Hatch green chiles on top. Place the block of cream cheese in the center, on top of the chiles.
Look for The chicken is covered with chiles and the cream cheese sits on top.
Tip Cut the cream cheese into a few pieces to help it melt faster.
  2. Cook on Low
Cover the slow cooker with the glass lid. Cook on LOW for 4 hours, until the chicken is tender and easily shreds with a fork. Do not lift the lid during cooking.
Look for The sauce is bubbling around the edges and the chicken is fork-tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist the urge to peek; the heat escapes and extends cooking time.

After 4 hours on LOW, the chicken should be fork-tender and the cream cheese fully melted into a creamy sauce. The chiles and spices will have colored the liquid a warm red-orange. The aroma is rich with roasted chile and garlic. Check that the chicken reaches 165°F (74°C) before shredding.

Shred and Melt

  1. Shred the Chicken
Using two forks, shred the chicken breasts directly in the slow cooker. Stir the shredded chicken into the sauce until well coated.
Look for The chicken pulls apart easily and is coated in the creamy chile sauce.
Tip If the sauce seems thin, let it cook uncovered for 10 minutes to thicken.
  2. Melt the Pepper Jack
Sprinkle the shredded Pepper Jack cheese over the hot chicken mixture. Stir gently until the cheese is fully melted and the sauce is creamy and smooth.
Look for The cheese is melted and the sauce is creamy and glossy.
Tip Add the cheese off the heat if the slow cooker is on warm, to prevent curdling.

Once shredded, the chicken should be coated in the creamy sauce. After adding the Pepper Jack, the mixture becomes thick, glossy, and slightly stretchy.

The cheese should be completely melted and smooth. Taste for seasoning and add salt if needed. The sauce should cling to the chicken, not pool separately.

Serve and Garnish

  1. Serve and Garnish
Spoon the creamy chicken into warm flour tortillas or over crispy tater tots. Top with fresh chopped cilantro and serve immediately.
Look for The filling is creamy, with melted cheese stretching as you spoon it.
Tip Warm the tortillas in a dry skillet or microwave for pliability.

The final dish is creamy, with visible strands of melted Pepper Jack. The cilantro adds a fresh, bright contrast. When spooned into a warm tortilla, the filling should be thick enough to hold together without dripping excessively. The flavor is savory, slightly spicy, and deeply satisfying.

Common mistakes

A common mistake is lifting the lid during cooking, which lets heat escape and extends the cooking time. Another is using pre-shredded cheese, which may not melt as smoothly.

Avoid overcooking the chicken, which can make it dry and stringy. If the sauce curdles, it may be due to high heat or adding cheese too quickly; stir gently and keep the heat low.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) and shreds easily with a fork. The sauce should be bubbling and slightly thickened.

The cream cheese should be fully melted and incorporated. After shredding, the mixture should be creamy and well combined. If the sauce is too thin, cook uncovered on HIGH for 10-15 minutes to reduce.

  • Poultry: 165°F (74°C) in the thickest part
