Tips for success

For the best flavor, use a good-quality apple cider that is not too tart. If you prefer a thicker sauce, remove the pork and vegetables from the slow cooker, then simmer the remaining liquid in a saucepan over medium heat for 5 to 10 minutes until reduced.

You can also stir in a slurry of cornstarch and water to thicken it quickly.

This dish is versatile—try adding a diced onion or a few cloves of garlic to the slow cooker for extra savory depth.

A pinch of nutmeg or allspice would also complement the apple and sweet potato flavors. If you like a little heat, a pinch of cayenne pepper or red pepper flakes adds a subtle kick.

Variations

  • Add Onions and Garlic: Layer a diced yellow onion and 3 minced garlic cloves in the slow cooker along with the pork. This adds a savory depth that balances the sweetness of the apples and cider.
  • Use Chicken Instead: Substitute boneless, skinless chicken thighs for the pork. Cook on low for 4 to 5 hours, or until the chicken reaches 165°F (74°C). The sweet potatoes and apples work just as well with chicken.
  • Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a diced jalapeño to the slow cooker for a subtle heat that contrasts nicely with the sweet cider and apples.
  • Thicker Sauce: After cooking, transfer the pork and vegetables to a platter. Whisk 2 tablespoons of cornstarch with 2 tablespoons of cold water, then stir into the liquid in the slow cooker. Cook on high for 15 minutes until thickened.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors continue to meld as it sits, and the dish tastes even better the next day.

Reheat gently in the microwave or on the stovetop with a splash of cider or broth to loosen the sauce.

You can assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.

If starting from cold, add about 30 minutes to the cooking time. Alternatively, cook the full dish ahead and reheat gently before serving.

Serving ideas

Serve this pork and sweet potato dish over steamed rice, mashed potatoes, or egg noodles to soak up the delicious cider sauce. A side of green beans or a crisp green salad adds a fresh contrast. For a heartier meal, serve with crusty bread for dipping into the sauce.

This dish also makes a great filling for tacos or wraps. Shred the pork slightly and pile it into warm tortillas with a spoonful of the sweet potatoes and apples. Top with a dollop of sour cream or a sprinkle of fresh herbs for a quick, satisfying meal.

Frequently asked questions

Can this recipe be made with pork loin instead of pork shoulder?
Yes, but the cooking time should be reduced to about 4 hours on low to prevent the leaner meat from drying out. Check for doneness at 3 1/2 hours. The pork should reach 145°F (63°C) and be tender but not falling apart.
Can this recipe be cooked on high instead of low?
Yes, cook on high for 3 to 4 hours. The result will be similar, but the meat may be slightly less tender than when cooked on low. Always verify the internal temperature reaches at least 145°F (63°C).
What type of apples work best for this recipe?
Firm, sweet-tart apples like Honeycrisp, Gala, Fuji, or Braeburn hold their shape well during long cooking. Avoid soft varieties like McIntosh or Red Delicious, which can turn mushy.
Can this dish be frozen?
Yes, freeze the cooked and cooled pork and vegetables in an airtight container for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or microwave. Add a splash of cider or broth if needed.
Is it necessary to brown the pork before adding to the slow cooker?
No, browning is optional. The slow cooker produces tender meat without searing. If you prefer a deeper flavor, you can sear the cubes in a hot skillet for a few minutes before adding them, but it's not required.

Slow Cooker Pork Bites with Apples and Sweet Potatoes

Prep 15 minCook 6 hRest 5 minTotal 6 h 20 minServes 6
A white plate filled with cooked, bite-sized pork, sweet potatoes, and apples in a light amber cider sauce.

Ingredients

  • 2 lb pork shoulder, cut into 1-inch cubes
  • 2 medium sweet potatoes, peeled and cut into 1-inch chunks
  • 2 medium apples (such as Honeycrisp), cored and cut into 1-inch chunks
  • 1 tsp ground cinnamon
  • 1 tbsp dried sage
  • 1 1/2 cups apple cider
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Cut the pork shoulder into 1-inch cubes, trimming any large pieces of fat. Peel the sweet potatoes and cut them into 1-inch chunks. Core the apples and cut them into 1-inch chunks. Season the pork cubes with salt and pepper.
  2. Place the pork cubes in the bottom of the slow cooker. Nestle the sweet potato chunks and apple chunks evenly among the pork pieces. Sprinkle the ground cinnamon and dried sage over the top.
  3. Pour the apple cider evenly over the contents of the slow cooker. Do not stir. The liquid should come about halfway up the ingredients.
  4. Cover the slow cooker and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the pork is fork-tender and reaches an internal temperature of at least 145°F (63°C). Let it rest for 3 minutes before slicing.
  5. Turn off the slow cooker. Let the pork rest in the warm liquid for at least 3 minutes before serving. This allows the juices to redistribute and ensures a moist bite.
  6. Using a slotted spoon, transfer the pork, sweet potatoes, and apples to a serving platter. Spoon a little of the cooking liquid over the top. Serve warm.
