Tips for success

For the best flavor, sear the beef in a hot skillet before adding it to the slow cooker. While the video skips this step, browning the meat in a little oil for 2-3 minutes per side develops a deep crust and adds complexity to the final sauce.

If you do sear, deglaze the pan with a splash of stout and add those browned bits to the slow cooker for extra richness.

To make the sauce thicker, remove the beef and onions from the slow cooker, then transfer the liquid to a saucepan. Simmer over medium-high heat for 10-15 minutes, or until reduced by half.

Whisk in a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water if needed. This creates a more gravy-like consistency, perfect for pouring over mashed potatoes.

Variations

  • Herb and Garlic: Add 4 crushed garlic cloves and 2 sprigs of fresh rosemary to the slow cooker along with the onions. The garlic infuses the sauce with aromatic depth, while rosemary complements the beef and stout beautifully.
  • Mushroom and Thyme: Sauté 8 oz sliced cremini mushrooms in butter until golden, then add them to the slow cooker with 1 teaspoon dried thyme. The mushrooms add an earthy flavor that pairs well with the stout and makes the dish even more satisfying.
  • Root Vegetable Medley: Add 2 large carrots, cut into chunks, and 2 parsnips, peeled and sliced, along with the onions. The root vegetables absorb the savory sauce and become tender, creating a one-pot meal with extra vegetables.
  • Spicy Stout Kick: Stir 1-2 teaspoons of smoked paprika and 1/2 teaspoon of cayenne pepper into the salt and pepper before seasoning the beef. The smoky heat adds a new dimension to the rich sauce, giving it a subtle warmth.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or microwave, adding a splash of broth if needed.
Freezer
Freeze the cooled beef and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in a saucepan over medium heat, stirring occasionally, until warmed through. Add a splash of beef broth or water to loosen the sauce if needed.

Store leftover beef and onions in an airtight container in the refrigerator for up to 4 days. The sauce will solidify slightly when chilled, but it will re-liquefy when reheated. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the sauce is too thick.

This recipe can be assembled the night before. Place the beef, onions, salt, pepper, and butter in the slow cooker insert, cover, and refrigerate overnight.

In the morning, pour in the stout and start cooking on low. The total cook time may be slightly longer if starting from cold, so add about 30 minutes to the cooking time.

Serving ideas

Serve the beef over a bed of whipped Yukon Gold mashed potatoes, letting the sauce pool around the edges. The creamy potatoes are the perfect foil for the rich, malty beef. Alternatively, pile the beef onto crusty rolls for a hearty sandwich, or serve alongside roasted vegetables for a lighter meal.

For a classic Irish-inspired spread, pair this roast with colcannon (mashed potatoes with cabbage or kale) and a side of crusty soda bread.

The sauce is meant to be sopped up, so have plenty of bread or potatoes on hand. A cold pint of stout or a crisp green salad with a tangy vinaigrette helps cut through the richness.

Frequently asked questions

Can this recipe be made in a Dutch oven instead of a slow cooker?
Yes. Brown the beef in a Dutch oven over medium-high heat, then add the onions, stout, and butter. Cover and cook in a 300°F (150°C) oven for 3 to 4 hours, until fork-tender. Check occasionally to ensure there is enough liquid, adding a splash of beef broth if needed.
What if the sauce is too thin?
If the sauce seems too thin after cooking, remove the beef and onions, then simmer the liquid on the stovetop over medium heat for 10-15 minutes to reduce and thicken. Alternatively, whisk in a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water, and simmer until thickened.
Can the cooking time be shortened by using the high setting?
Yes, you can cook on high for 5 to 6 hours, but the beef may not be quite as tender as with low heat. The low setting allows the collagen to break down more gently, resulting in a more succulent texture. If using high, check for doneness at 5 hours.
Is it necessary to sear the beef before slow cooking?
No, the recipe works without searing, as the video shows. However, searing adds a deeper flavor through the Maillard reaction. If time allows, sear the roast in a hot skillet for 2-3 minutes per side before adding it to the slow cooker for an even richer taste.
Can the alcohol in the stout be cooked off?
Yes, the alcohol largely evaporates during the long slow-cooking process. After 8 hours, only a negligible amount remains. For a completely alcohol-free version, substitute the stout with an equal amount of beef broth or a non-alcoholic dark beer.

Slow-Cooker Guinness Onion Butter Chuck Roast

Prep 10 minCook 8 hTotal 8 h 10 minServes 6
Slow-cooker Guinness onion butter chuck roast in a black crockpot, with pearl onions and glossy sauce.

Ingredients

  • 3 1/2 lb beef chuck roast
  • 1 lb pearl onions, peeled
  • 1 bottle (12 oz) Guinness stout
  • 1/2 cup salted butter (1 stick)
  • 1 tsp kosher salt
  • 1/2 tsp black pepper, freshly ground

Instructions

  1. Place the beef chuck roast in the center of a 6-quart slow cooker. Scatter the peeled pearl onions around the roast. Season the beef generously with kosher salt and black pepper, turning to coat all sides.
  2. Pour the Guinness stout evenly over the roast and onions. The liquid should come about halfway up the sides of the roast, but it's fine if the top is exposed.
  3. Place the whole stick of salted butter on top of the roast. It will melt and emulsify into the cooking liquid as the roast cooks.
  4. Cover the slow cooker and cook on low for 8 to 10 hours, until the beef is fork-tender and easily shreds. Do not lift the lid during cooking to keep the heat steady. Let it rest for 3 minutes before slicing.
  5. Once the beef is fork-tender, transfer it to a cutting board. Let it rest for at least 3 minutes, then shred into large chunks using two forks. Discard any large pieces of fat if desired.
  6. Return the shredded beef to the slow cooker with the onions and cooking liquid. Stir gently to coat the meat with the glossy, buttery sauce. Let it sit on warm for 10 minutes to absorb the flavors.
  7. Serve the beef and onions over whipped mashed potatoes or crusty bread, spooning the pan jus over the top. Enjoy hot.
