Tips for success

For the best results, choose beef cheeks that are well-marbled and have a deep red color. If you can, ask your butcher to trim them for you. When layering the ingredients in the Crockpot, make sure the beef is mostly submerged in the liquid.

If needed, add a splash of beef broth or water, but remember that the beef will release its own juices as it cooks, so don't overdo it.

The sauce is the star here. If you prefer a thicker sauce, you can thicken it with a slurry of cornstarch and water after cooking. Just whisk a tablespoon of cornstarch with two tablespoons of cold water, stir it into the hot sauce, and let it simmer for a few minutes.

For an extra layer of flavor, you can also add a splash of Worcestershire sauce or a teaspoon of Dijon mustard, but the recipe is delicious as written.

Variations

  • Beef and Root Vegetable Stew: Add 2 cups of peeled and chopped parsnips, turnips, or potatoes along with the carrots. The root vegetables will absorb the rich sauce and become tender. Serve the stew in bowls with crusty bread.
  • Spicy Stout Beef: Add 1-2 teaspoons of smoked paprika and a pinch of cayenne pepper along with the other ingredients. This adds a subtle warmth that complements the malty stout.
  • Herb-Infused Variation: Swap the fresh thyme for 2 sprigs of fresh rosemary and 1 bay leaf. The rosemary adds a piney aroma that pairs beautifully with the beef and stout.
  • Slow Cooker Pot Roast Style: Instead of serving over puree, shred the beef and toss it with the sauce. Serve on toasted buns topped with a spoonful of horseradish cream for a delicious sandwich.

Storage and make-ahead

Fridge
Store leftover beef cheeks and sauce in an airtight container in the refrigerator for up to 4 days.
Freezer
Freeze the cooled beef cheeks and sauce in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop.
Reheat
Reheat gently in a saucepan over medium-low heat, adding a splash of water or beef broth if the sauce has thickened. Stir occasionally until warmed through.

Store any leftover beef cheeks and sauce in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even better the next day. To reheat, gently warm in a saucepan over medium-low heat, adding a splash of water or beef broth if the sauce has thickened too much. The beef will remain tender and juicy.

This recipe is perfect for making ahead. You can cook the beef cheeks a day or two in advance, then refrigerate the meat and sauce separately.

When ready to serve, reheat the sauce in a saucepan, add the beef, and warm through gently. The parsnip puree can also be made ahead and reheated, or you can serve the beef over freshly made mashed potatoes.

Serving ideas

Serve the beef cheeks over a generous swoosh of roasted parsnip puree, with the dark treacle jus ladled over the top. The sweetness of the parsnips balances the rich, malty beef beautifully.

Add a sprinkle of fresh thyme leaves or flaky sea salt for a final touch. This dish is hearty enough to stand alone, but it also pairs well with crusty bread or a simple green salad.

For a more casual presentation, shred the beef cheeks with two forks and pile them onto soft rolls or over creamy polenta. The sauce can be spooned over generously. Leftovers are fantastic in tacos or on top of a baked potato. This recipe is versatile and forgiving, so feel free to make it your own.

Frequently asked questions

Can this recipe be made with a different cut of beef?
Yes, beef chuck roast is a great substitute. Cut it into large chunks and cook for the same amount of time. The collagen in chuck will break down similarly, yielding tender, shreddable meat. You can also use short ribs, but they may cook slightly faster, so check for tenderness at the 8-hour mark.
Is it safe to leave the Crockpot on low for 8.5 hours?
Yes, slow cookers are designed to be left unattended on low for extended periods. The low setting maintains a safe temperature that keeps food out of the danger zone. As long as the Crockpot is in good working condition and the lid is on, it's safe to cook for 8.5 hours or longer.
Can this dish be made gluten-free?
Guinness contains gluten, so to make this gluten-free, use a gluten-free stout or a dark beer that is certified gluten-free. You can also replace the beer with beef broth and a splash of balsamic vinegar for depth. Be sure to check all other ingredients for gluten, though the remaining ones are naturally gluten-free.
What can be used instead of black treacle?
Black treacle is a dark, slightly bitter molasses. The closest substitute is dark molasses, which is more common in the U.S. You can also use a combination of molasses and dark corn syrup, or even honey mixed with a little molasses. The flavor will be slightly different but still delicious.
How should leftovers be reheated?
Reheat leftovers gently in a saucepan over medium-low heat, adding a splash of water or beef broth if the sauce has thickened too much. Stir occasionally until warmed through. Alternatively, you can reheat in the microwave in 30-second intervals, stirring in between. The beef will remain tender and juicy.

Guinness and Black Treacle Crockpot Beef Cheeks

A close-up of tender, glossy Guinness braised beef cheeks served on a plate with parsnip puree.

Ingredients

  • 3 lb beef cheeks, trimmed
  • 440 ml Guinness stout
  • 45 ml black treacle molasses
  • 2 carrots, diced
  • 4 shallots, peeled and halved
  • 6 sprigs fresh thyme
  • Roasted parsnip puree, for serving

Instructions

  1. Place the trimmed beef cheeks in the Crockpot basin. Pour the Guinness stout over the beef, then add the black treacle molasses. Scatter the diced carrots, halved shallots, and fresh thyme sprigs around the beef. Use tongs to turn the beef once so it's coated in the dark liquid.
  2. Cover the Crockpot with its glass lid. Set the slow cooker to LOW and cook for 8.5 hours, undisturbed. The beef cheeks should become spoon-tender, and the sauce will turn glossy and dark as the collagen breaks down. Let it rest for 3 minutes before slicing.
  3. After 8.5 hours, check the beef cheeks by piercing one with a fork. It should slide in with no resistance and the meat should pull apart easily. If not fully tender, continue cooking in 30-minute increments until spoon-tender. Let it rest for 3 minutes before slicing.
  4. Turn off the slow cooker. Using tongs, carefully transfer the beef cheeks to a cutting board. Let them rest for at least 3 minutes before shredding or serving whole. This allows the juices to redistribute.
  5. While the beef rests, skim any excess fat from the surface of the sauce in the Crockpot. Remove the thyme sprigs. If the sauce seems thin, let it simmer on the stovetop in a saucepan for a few minutes to reduce slightly, or leave it as is for a looser jus.
  6. Spoon a generous amount of roasted parsnip puree onto each plate. Place a beef cheek (or a few chunks) on top. Ladle the dark treacle jus over the beef and puree, making sure to include some carrots and shallots.
