Tips for success
For the best flavor, sear the beef cubes in a hot skillet with a little oil before adding them to the slow cooker. This adds a deep, caramelized crust that enhances the overall taste. If you're short on time, skip this step — the slow cooker will still produce tender, flavorful beef.
To make the sauce extra smooth, stir in a splash of beef broth or milk after cooking if it seems too thick. You can also add a tablespoon of Dijon mustard for a tangy kick. For a crispy topping, sprinkle some extra shredded Gruyère over the finished dish and broil for a minute until golden and bubbly.
Variations
- Mushroom and Thyme: Add 8 oz of sliced cremini mushrooms and 1 teaspoon of dried thyme along with the green beans. The mushrooms add an earthy depth that pairs beautifully with the Gruyère.
- Spicy Kick: Include 1/2 teaspoon of red pepper flakes or a chopped jalapeño with the vegetables. The heat cuts through the richness of the cheese sauce for a lively twist.
- Chicken Version: Substitute 2 lb of boneless, skinless chicken thighs for the beef. Cook on low for 6 hours or until the chicken is cooked through and tender. No need to rest the meat, just shred it before serving.
- Vegetarian Option: Replace the beef with 2 cups of extra firm tofu, cubed, and add an extra 1/2 cup of vegetable broth. Cook on low for 4 hours, until the vegetables are tender and the tofu is heated through.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or microwave until piping hot.
- Freezer
- Freeze the cooled dish in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until heated through. Add a splash of beef broth or milk if the sauce has thickened too much.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making it even more delicious the next day.
To reheat, place a portion in a microwave-safe dish and heat in 30-second intervals, stirring in between, until hot. Or reheat in a saucepan over medium-low heat, adding a splash of broth or milk to loosen the sauce if needed.
This recipe is perfect for meal prep. You can assemble all the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on low as directed.
You may need to add 30 minutes to the cooking time if the ingredients are cold from the fridge. Alternatively, you can cook the entire dish, let it cool, and refrigerate it in portions for up to 4 days.
Serving ideas
Serve this hearty dish over toasted garlic brioche slices to soak up the creamy sauce. The bread adds a buttery crunch that contrasts beautifully with the tender beef and vegetables.
You can also serve it over egg noodles, mashed potatoes, or rice. A simple green salad with a tangy vinaigrette would brighten the rich flavors.
For a complete meal, consider adding a side of roasted asparagus or a simple steamed vegetable. The dish is rich and satisfying on its own, but a little freshness from a side salad or pickled vegetables can balance the creaminess.
Garnish with fresh chopped parsley or chives if desired, though the recipe is delicious without any extra garnish.
