Tips for success

For the best texture, cut the beef into uniform cubes so they cook at the same rate. If some pieces are larger, they may need extra time.

Also, do not stir the ingredients after layering; the slow cooker will meld them naturally. If you prefer a thicker sauce, remove the lid for the last 30 minutes of cooking to let some liquid evaporate.

When serving, toast the brioche just before you are ready to eat so it stays crisp. If you have leftovers, the sauce will thicken as it cools; add a splash of beef broth when reheating to restore its silky consistency.

This dish is also delicious over mashed potatoes or egg noodles if you want to switch up the base.

Variations

  • Mushroom and Thyme: Add 8 oz sliced cremini mushrooms along with the onions. Sprinkle 1 teaspoon dried thyme over the beef before adding the consommé. The mushrooms add an earthy depth that pairs well with the Gruyère.
  • Spicy Kick: Add 1/2 teaspoon red pepper flakes or a minced jalapeño with the onions. For extra heat, stir in a teaspoon of hot sauce just before serving. This gives the rich sauce a pleasant warmth.
  • Herb-Infused: Add 2 sprigs of fresh rosemary and 3 sprigs of fresh thyme to the slow cooker along with the consommé. Remove the herb sprigs before serving. The herbs infuse the sauce with a fragrant, savory note.
  • Beer-Braised: Replace half of the consommé with 1/2 cup of a dark beer, such as a stout or brown ale. The beer adds a malty complexity that complements the beef and cheese. Reduce the consommé to 1/2 can (5 oz) and add 1/2 cup beer.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. The sauce will thicken; add a splash of broth when reheating.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat gently on the stovetop over low heat, stirring occasionally, or in the microwave in 30-second bursts. Add a little beef broth if the sauce is too thick.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The sauce will solidify when cold, but it will loosen when reheated. Reheat gently on the stovetop or in the microwave, adding a little beef broth or water if needed to reach the desired consistency.

This recipe is perfect for making ahead. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed.

You may need to add 30 minutes to the cooking time if starting from cold. Alternatively, cook the dish fully, cool, and refrigerate; reheat gently before serving.

Serving ideas

Serve the beef and sauce over toasted garlic brioche slices for a classic French onion soup-inspired presentation. The brioche soaks up the rich sauce while keeping a little crunch at the edges. For a heartier meal, pair it with a simple green salad or roasted vegetables to balance the richness.

This dish also works well over mashed potatoes, rice, or egg noodles if you prefer a different base.

Garnish with a sprinkle of fresh thyme or chopped parsley for a pop of color and freshness, though the recipe is delicious as is. Leftovers make a fantastic filling for sandwiches or a topping for baked potatoes.

Frequently asked questions

Can this recipe be made in a pressure cooker instead?
Yes. Brown the beef first, then add the onions, consommé, and cook on high pressure for 35 minutes with a natural release. Stir in the cream cheese and Gruyère until melted. The cooking time is much shorter, but the result is still tender and flavorful.
Why does the sauce look curdled or separated?
Curdling can happen if the heat is too high or if the cream cheese is added cold. Use full-fat cream cheese and let it soften before adding. Cook on low and avoid stirring until the end. If it does separate, whisk vigorously to bring it back together.
Can the beef be substituted with another cut?
Yes, use boneless short ribs or beef brisket, both of which become tender with slow cooking. Avoid lean cuts like sirloin, which can dry out. Cut any larger pieces into similar-sized cubes so they cook evenly.
What can be used instead of brioche?
Sourdough, a crusty baguette, or even thick slices of ciabatta work well. For a gluten-free option, use your favorite gluten-free bread or serve the beef over mashed potatoes or rice instead.
How can the dish be made thicker?
If the sauce is too thin after cooking, remove the lid and cook on high for an additional 20–30 minutes to let it reduce. Alternatively, mix 1 tablespoon cornstarch with 2 tablespoons cold water and stir it into the sauce, then cook for 10 more minutes.

Slow-cooker French onion beef with Gruyère sauce in a black crockpot, garnished with thyme

Ingredients

  • 2 lb beef chuck stew meat, cut into 1-inch cubes
  • 2 medium Vidalia onions, thinly sliced
  • 1 can (10.5 oz) beef consommé
  • 8 oz cream cheese, softened
  • 1 1/2 cups shredded Gruyère cheese
  • toasted garlic brioche slices, for serving

Instructions

  1. Place the beef chuck cubes in the bottom of a 6- to 7-quart slow cooker in an even layer. Scatter the sliced Vidalia onions over the beef. Pour the beef consommé over the onions and beef. Do not stir.
  2. Drop the softened cream cheese in large spoonfuls over the top of the onion mixture. Sprinkle the shredded Gruyère evenly over the cream cheese. Do not stir.
  3. Cover the slow cooker and cook on LOW for 8 hours, or on HIGH for 4 hours, until the beef is fork-tender and the onions are caramelized. Do not lift the lid during the first 6 hours on LOW or 3 hours on HIGH. Let it rest for 3 minutes before slicing.
  4. After cooking, stir the mixture gently to combine the melted cheese into a smooth sauce. Let the beef rest in the sauce for at least 3 minutes before serving.
  5. Toast the garlic brioche slices until golden. Place the toasted brioche on plates or a platter. Ladle the beef and sauce over the brioche, making sure each serving gets plenty of onions and cheese sauce.
