Before you start

Before beginning, ensure that your slow cooker is placed on a stable, heat-resistant surface with adequate clearance around the unit for ventilation. Gather all your ingredients and measure them out to ensure a seamless assembly process.

If you are using fresh potatoes, scrub them thoroughly and cut them into even, bite-sized wedges to promote uniform cooking. Prepare the lemon broth by combining the stock and lemon juice in a glass measuring cup. Having everything organized before you turn on the slow cooker will make the assembly process efficient and straightforward.

Ingredients at a glance (5)
  • 5 boneless pork chops
  • 4 cups potato wedges
  • 1 tbsp dried oregano
  • 1 tsp garlic powder
  • 1 cup lemon broth

Instructions

Assembly of ingredients

  1. Assemble the ingredients
Place the boneless pork chops into the bottom of the slow cooker, arranging them in an overlapping fan pattern to ensure even exposure to heat. Tuck the potato wedges into the spaces around and between the pork chops, ensuring they are partially submerged to cook through properly.
Look for The pork chops should cover the base of the slow cooker insert evenly.
Tip Do not overcrowd the slow cooker, as this can lead to uneven cooking of the potatoes.

At the end of this phase, the pork chops should be neatly arranged at the bottom of the slow cooker, with the potato wedges tucked securely around them. The ingredients should be distributed evenly to ensure that the heat circulates properly throughout the vessel.

Check that the pork is not layered too deeply, as this can prevent the heat from reaching the center of the stack. Everything should look ready to be seasoned and moistened before the lid is placed on the unit.

Seasoning and liquid addition

  1. Season and add liquid
Evenly sprinkle the dried oregano and garlic powder over the pork and potatoes. Pour the lemon broth over the entire mixture, ensuring the liquid reaches the base of the insert to create steam and flavor during the cooking process.
Look for The broth should settle at the bottom while the herbs coat the top of the meat.
Tip Use a small ramekin to distribute the dry spices evenly across the surface.

Once the herbs and broth are added, the slow cooker should have a fragrant aroma of oregano and citrus. The liquid should be visible at the bottom, providing the necessary moisture for the braising process. Check that the spices are distributed across all pieces of meat and potato. The contents should look moist and ready to begin the slow, steady cooking process that will eventually yield a tender and flavorful final dish.

Slow cooking and resting

  1. Slow cook and serve
Cover the slow cooker and cook on low for 4 hours until the pork reaches an internal temperature of 145°F (63°C). Once finished, remove the pork and allow it to rest for at least 3 minutes before serving with the tender potatoes and the herb-infused sauce from the base of the cooker.
Look for The pork should be opaque throughout and the potatoes easily pierced with a fork.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Ensure the meat reaches the safe temperature for a whole cut of meat.

After the cooking time, the pork should be tender and the potatoes soft enough to be easily pierced with a fork. The sauce should have a light, savory consistency. Before serving, verify the internal temperature of the pork with a thermometer. The meat should look moist and juicy, and the kitchen should smell savory and bright. Ensure the meat has rested for the required time so that it is ready to be plated alongside the cooked potatoes and sauce.

Common mistakes

A common mistake is using pork chops that are too thin, which can lead to overcooking and a tough texture even in a slow cooker. Aim for chops that are at least one inch thick to maintain moisture.

Another error is failing to ensure the potatoes are partially submerged in the liquid; if they are placed only on top, they may not cook through and will remain hard. Additionally, avoid lifting the lid frequently during the cooking process, as each time the lid is opened, heat escapes, significantly increasing the total cooking time required.

How to tell it’s done

To determine if the pork is done, use a digital meat thermometer inserted into the thickest part of the chop. The pork is fully cooked and safe to eat when it reaches an internal temperature of 145°F (63°C). At this stage, the meat should be opaque and tender.

Once you reach this temperature, remove the chops from the slow cooker and let them rest on a plate for at least 3 minutes. This resting period allows the juices to redistribute, ensuring that every bite remains succulent and flavorful rather than dry.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
