Tips for success
For the most tender results, choose a pork shoulder with good marbling. If you have time, sear the pork cubes in a hot skillet before adding them to the slow cooker; this adds a deeper, caramelized flavor.
You can also add a cinnamon stick or a bay leaf to the pot for an extra layer of warmth. Remember to taste the sauce before serving and adjust the salt if needed.
To make the dish ahead, cook the pork, shred it, and store it in its juices. The flavors will only improve overnight. When reheating, add a splash of broth or water to keep the meat moist.
The toppings can be prepped a day in advance and stored in separate containers. Assemble the bowls just before serving to keep everything fresh and vibrant.
Variations
- Spicy Greek Pork: Add 1-2 teaspoons of crushed red pepper flakes or a minced fresh chili to the seasoning mixture for a spicy kick. Serve with extra tzatziki to cool things down.
- Herb-Rubbed Pork: Replace the dried oregano with 1 tablespoon each of dried thyme, rosemary, and marjoram. This adds a more complex herbal flavor that pairs well with the lemon and garlic.
- Citrus and Honey Glaze: Stir in 2 tablespoons of honey and 1 tablespoon of Dijon mustard with the other ingredients. This adds a subtle sweetness and tang that caramelizes nicely during cooking.
- Slow-Cooker Greek Chicken: Substitute boneless, skinless chicken thighs for the pork shoulder and reduce the cooking time to 4-5 hours on LOW. The chicken will be equally tender and flavorful.

Serving ideas
Serve the pork souvlaki in warm pita bread with a generous dollop of tzatziki, and let everyone add their own cucumber, tomato, and feta.
The cool, creamy sauce balances the rich, savory pork, while the fresh vegetables add crunch and brightness. This is a hands-on meal that invites customization, perfect for family dinners or casual gatherings.
For a rice bowl version, spoon the pork over a bed of fluffy rice and top with the same accompaniments. Add a squeeze of fresh lemon over the top for an extra burst of citrus.
You can also serve the pork as a main course with a side of Greek salad or roasted potatoes. The possibilities are endless, and each version is satisfying and full of Mediterranean flavor.
