Before you start
Before beginning, ensure the slow cooker insert is clean and dry. Check that the chicken drumsticks are fully thawed if previously frozen, as cooking from frozen is not recommended for slow cookers due to food safety concerns.
Measure out the garlic and onion powders into small bowls for easy access. Having the grape jelly and chili sauce ready to pour will make the assembly process quick and efficient. Ensure you have a reliable meat thermometer on hand to check the internal temperature once the cooking time is complete.
Ingredients at a glance (5)
- 8 chicken drumsticks
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 cup grape jelly
- 1/2 cup chili sauce
Instructions
Assembly and seasoning
- Prepare the chickenPlace the chicken drumsticks in the slow cooker, arranging them around the base of the insert so they are evenly spaced. Ensure the skin is intact for the best final texture.Look for Chicken is arranged in a single layer if possible.Tip Pat the chicken dry with paper towels before adding to the cooker to improve the sauce adhesion.
At this stage, the chicken should be arranged in the slow cooker with the seasonings and sauce added on top. The ingredients will look separated, which is normal. Ensure the chicken is not overlapping excessively to promote even heat distribution. Verify that the slow cooker is plugged in and set to the low setting. The kitchen should smell neutral, as the cooking process has not yet begun to release the aromas of the garlic and onion.
Slow cooking process
- Add seasonings and sauceSprinkle the garlic powder and onion powder evenly over the chicken. Add the grape jelly in dollops across the top, then pour the chili sauce over the entire mixture.Look for Ingredients are distributed over the chicken.Tip Do not stir the mixture yet, as the slow cooker will combine the ingredients during the cooking process.
During this phase, the ingredients will begin to combine as the heat rises. You may notice the grape jelly melting and mixing with the chili sauce and chicken juices. The internal temperature of the cooker will be rising, but the chicken will still be firm.
Ensure the lid remains closed to trap the heat. The kitchen should begin to smell savory as the aromatics activate. Avoid any temptation to stir the contents, as the sauce will naturally thicken and coat the meat.
Final reduction and serving
- Cook until tenderCover the slow cooker and cook on low for 4 hours. Once done, verify the internal temperature of the chicken has reached 165°F (74°C) using a meat thermometer. Let the chicken rest for 5 minutes before serving to ensure the sauce coats the meat properly.Look for Chicken is fork-tender and sauce is thick.Safe temperature 165°F (74°C) internal temperature (poultry)Tip If the sauce is too thin, remove the lid for the last 30 minutes of cooking to allow it to reduce.
The chicken should now be very tender and the sauce should have thickened into a rich, dark glaze. Check the internal temperature with a thermometer; it must read at least 165°F (74°C). The meat should look moist and the glaze should be bubbling slightly around the edges. If the sauce remains too thin, you can leave the lid off for a short period to allow for further reduction. The final dish should smell sweet and savory with a deep, appetizing aroma.
Common mistakes
Avoid lifting the lid frequently during the cooking process, as each time the lid is opened, heat escapes and the cooking time is extended by about 15 to 20 minutes. Do not crowd the slow cooker, as this prevents even cooking and can lead to uneven texture.
Ensure you do not use a sauce that is overly acidic or thin, as it will not thicken properly. Lastly, never leave raw poultry out at room temperature; keep it in the refrigerator until the very moment you are ready to assemble the ingredients in the cooker.
How to tell it’s done
The chicken is done when the meat is extremely tender and pulls away from the bone easily. Use a digital meat thermometer inserted into the thickest part of the drumstick, avoiding the bone, to verify that the internal temperature has reached at least 165°F (74°C).
The sauce should be thick, glossy, and cling to the chicken, having reduced slightly from the initial volume. If the meat does not reach the required temperature, continue cooking for an additional 15 minutes before checking again.
- Poultry: 165°F (74°C) in the thickest part
