Tips for success
For the most tender chicken, always cook on LOW. The low heat gives the collagen in the thighs time to break down, resulting in a melt-in-your-mouth texture.
If you're short on time, HIGH works, but the meat won't be quite as soft. Also, don't skip the water in the sauce—it helps the gochujang dissolve and prevents it from sticking to the bottom of the slow cooker.
To intensify the flavor, you can sear the chicken thighs in a hot skillet for 2-3 minutes per side before adding them to the slow cooker. This adds a caramelized crust that deepens the overall taste. However, this is optional and the video shows no searing. If you do sear, reduce the salt in the sauce slightly, as the browning adds savory notes.
Variations
- Spicy Peach Chicken Tacos: Shred the cooked chicken and serve in warm corn tortillas with sliced radishes, pickled onions, and a dollop of sour cream. The sweet-spicy sauce doubles as a taco sauce. Add a squeeze of lime for brightness.
- Mango Gochujang Chicken: Replace the peaches with fresh or frozen mango chunks. Mango is sweeter and more tropical, giving the sauce a different but equally delicious character. Use the same quantity and follow the same steps.
- Extra Garlicky Version: Add 3-4 minced garlic cloves along with the garlic powder for a more pronounced savory flavor. The garlic will mellow during the long cook, so don't worry about it being too pungent.
- Sesame-Soy Twist: Stir 1 tablespoon soy sauce and 1 teaspoon toasted sesame oil into the gochujang mixture. The soy adds saltiness and the sesame adds a nutty aroma that complements the peaches. Sprinkle with sesame seeds before serving.
Storage and make-ahead
- Fridge
- Store in an airtight container in the fridge for up to 4 days. The sauce will thicken as it cools; add a splash of water when reheating.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat gently in a saucepan over medium-low heat, stirring occasionally, until hot. Add a splash of water or broth if the sauce is too thick.
Leftover chicken and sauce can be stored in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight, making the leftovers even more delicious.
Reheat gently in a saucepan over medium-low heat, adding a splash of water or chicken broth if the sauce has thickened too much. The chicken can also be shredded and used in tacos, rice bowls, or sandwiches.
The entire dish can be made 1 day ahead. Cook as directed, let the chicken cool in the sauce for no more than 2 hours, then refrigerate in an airtight container.
The next day, reheat gently on the stovetop or in the microwave. The sauce will have thickened, so add a tablespoon of water or broth to loosen it if needed. This is a great make-ahead meal for busy weeknights.
Serving ideas
Serve the chicken thighs over steamed white or brown rice, with the sauce spooned generously over the top. The rice soaks up the savory-sweet sauce, balancing the heat. For a low-carb option, serve with cauliflower rice or alongside roasted vegetables. A simple cucumber salad or kimchi on the side adds a fresh, crunchy contrast to the rich chicken.
For a heartier meal, tuck the chicken and sauce into warm tortillas with shredded cabbage and a squeeze of lime. The gochujang and peach flavors also work well in lettuce wraps or over noodles.
If you have extra sauce, spoon it over roasted vegetables or use it as a dipping sauce for crusty bread. Garnish with sliced green onions and sesame seeds if you like, though the video does not show them.

Slow Cooker Gochujang Peach Chicken Thighs

Ingredients
- 2 lb boneless skinless chicken thighs
- 1 cup peach slices (fresh or frozen, thawed)
- 1 tsp garlic powder
- 1/2 cup gochujang (Korean chili paste)
- 1/4 cup water
Instructions
- Place the chicken thighs in the slow cooker insert in a single layer, overlapping slightly if needed. Scatter the peach slices evenly over the chicken. Sprinkle the garlic powder over the top.
- In a small bowl, stir together the gochujang and water until smooth. Spoon the sauce evenly over the chicken and peaches. Spread it gently with the back of the spoon to coat as much of the surface as possible.
- Cover the slow cooker and cook on LOW for 4 hours or on HIGH for 2 1/2 to 3 hours, until the chicken is cooked through and tender. The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part.
- Once the chicken is done, transfer it to a platter or serving plate. Spoon the peach slices and sauce from the slow cooker over the top. Serve hot.
