Tips for success
For the most flavorful results, use fresh ginger rather than ground. Julienning the ginger into thin matchsticks ensures it softens during cooking and infuses the sauce with its aromatic heat.
Scallions should be cut into 2-inch batons so they hold their shape and add a pleasant textural contrast. If you prefer a milder onion flavor, use only the white and light green parts of the scallions.
Toasting sesame seeds before adding them brings out their nutty flavor. You can toast them in a dry skillet over medium heat for 1–2 minutes, shaking frequently, until golden and fragrant.
If using store-bought toasted sesame seeds, skip this step. For an extra layer of flavor, consider adding a splash of rice vinegar or a pinch of red pepper flakes at the end, though this is not required for the recipe.
Variations
- Spicy Kick: Add 1–2 teaspoons of sriracha or chili garlic sauce to the teriyaki glaze before pouring over the chicken. For extra heat, sprinkle with red pepper flakes when serving.
- Honey Garlic Twist: Replace half of the teriyaki glaze with honey and add 4 minced garlic cloves. The honey adds floral sweetness, and the garlic deepens the savory flavor.
- Pineapple Teriyaki: Add 1 cup of pineapple chunks (fresh or canned, drained) along with the chicken. The pineapple adds tropical sweetness and the juice helps tenderize the chicken.
- Sesame Orange: Add the zest and juice of one orange to the teriyaki glaze, and increase the sesame seeds to 2 tablespoons. The citrus brightens the dish and pairs beautifully with sesame.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium heat, stirring occasionally, until heated through. Add a splash of water or extra teriyaki glaze if the sauce is too thick.
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. The chicken will continue to absorb the glaze as it sits, so the flavor will intensify.
Reheat gently in the microwave or on the stovetop with a splash of water or extra teriyaki glaze to loosen the sauce. The dish also freezes well for up to 3 months; thaw overnight in the refrigerator before reheating.
You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker base and cook on low as directed.
The cooking time may be slightly longer if starting from cold. Alternatively, cook the dish fully and refrigerate for up to 4 days; reheat in a saucepan over medium heat, stirring occasionally, until warmed through.
Serving ideas
Serve the ginger scallion teriyaki chicken bites over steamed jasmine rice, with extra glaze spooned over the top. Garnish with additional sliced scallions and a sprinkle of sesame seeds if desired. The dish also pairs well with steamed broccoli or a simple green salad. For a low-carb option, serve over cauliflower rice or alongside stir-fried vegetables.
This dish is best enjoyed warm, straight from the slow cooker. The glaze is at its most glossy and the chicken is at its most tender right after cooking. If you have leftovers, they can be repurposed into rice bowls, wraps, or even a filling for lettuce cups. The flavors are versatile and hold up well to reheating.

Slow Cooker Ginger Scallion Teriyaki Chicken Bites

Ingredients
- 2 lb boneless skinless chicken breasts, cut into 1-inch cubes
- 2 tbsp fresh ginger, peeled and julienned
- 4 scallions, cut into 2-inch batons
- 1 cup teriyaki glaze
- 1 tbsp toasted sesame seeds
Instructions
- Place the cubed chicken breasts in an even layer in the bottom of a 6-quart slow cooker. Spread the pieces out so they cover the bottom evenly, which helps them cook uniformly.
- Sprinkle the julienned fresh ginger and the scallion batons over the chicken. Distribute them evenly so every bite gets a hit of aromatic flavor.
- Pour the teriyaki glaze evenly over the chicken and aromatics. Sprinkle the toasted sesame seeds on top. Do not stir; the layers will meld during cooking.
- Cover the slow cooker with its lid. Cook on low for 4 hours, or until the chicken is cooked through and tender. Avoid lifting the lid during cooking, as this releases heat and extends the cooking time.
- After 4 hours, use an instant-read thermometer to check that the thickest piece of chicken registers at least 165°F (74°C). If it hasn't reached that temperature, continue cooking in 15-minute increments until it does.
- Using a serving spoon, gently lift the chicken, ginger, and scallions out of the slow cooker, letting the excess glaze drip back into the pot. Spoon the mixture over steamed jasmine rice on a plate or in bowls.
