Before you start

Before you start, make sure the chicken thighs are thawed if they were frozen. Pat them dry with paper towels — this helps the sauce cling better. Julienne the ginger into thin matchsticks and cut the scallions into 2-inch pieces.

Measure out the honey and soy sauce. Have your slow cooker ready and plugged in. If you plan to serve with rice, start it before you begin the recipe so everything is ready at the same time.

Ingredients at a glance (5)
  • 6 boneless skinless chicken thighs
  • 2 tbsp fresh ginger, julienned
  • 4 scallions, cut into 2-inch pieces
  • 1/3 cup honey
  • 1/4 cup soy sauce

Instructions

Layer and Sauce

  1. Layer the chicken and aromatics
Place the chicken thighs in the bottom of the slow cooker in a single layer. Scatter the julienned ginger and scallion pieces over the chicken.
Look for The chicken should be mostly covered by the aromatics.
Tip No need to stir; layering keeps the ginger and scallions on top where they will caramelize.
  2. Pour the sauce over
In a small bowl, whisk together the honey and soy sauce until combined. Pour the mixture evenly over the chicken and aromatics.
Look for The sauce should coat the chicken and pool around the edges.
Tip Use a spatula to scrape every last bit of honey from the measuring cup.

The raw chicken should be nestled in the slow cooker with the ginger and scallions scattered on top. The honey-soy sauce should be poured evenly over everything, creating a glossy, dark liquid pooling around the chicken. The aromatics should be visible and not completely submerged. This is the starting point for a long, slow simmer.

Slow Cook

  1. Cook on low
Cover the slow cooker and cook on low for 4 to 5 hours, or until the chicken is tender and reaches an internal temperature of 165°F (74°C).
Look for The sauce will be bubbling gently and the chicken will be fork-tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during cooking to keep the heat steady.
  2. Check the chicken temperature
After 4 hours, check the internal temperature of the thickest part of a chicken thigh with an instant-read thermometer. It should read 165°F (74°C).
Look for The thermometer should slide in easily and read at least 165°F (74°C).
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If not done, continue cooking in 30-minute increments.

After 4-5 hours, the kitchen will smell of sweet soy and ginger. The sauce should be bubbling gently around the edges, and the chicken should look caramelized and glistening.

A fork should pierce the meat with little resistance, and the thickest part of a thigh should register 165°F (74°C). The sauce will have reduced and thickened slightly.

Rest and Serve

  1. Rest and thicken the sauce
Turn off the slow cooker. Remove the chicken to a plate and let it rest for 5 minutes. If the sauce is thin, simmer it in a small saucepan over medium heat for 5-10 minutes until thickened.
Look for The sauce should coat the back of a spoon.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resting the chicken helps the juices redistribute, keeping the meat moist.
  2. Serve over rice
Spoon steamed rice onto plates, top with the chicken, and drizzle with the thickened sauce. Garnish with extra sliced scallions if desired.
Look for The chicken should be glistening with the sticky sauce.
Tip Serve immediately for the best texture.

The chicken should be resting on a plate, with the sauce thickened to a syrupy consistency. When you spoon it over rice, the sauce should cling to the chicken and soak into the rice. The ginger and scallions should be soft and slightly charred. The dish should look glossy and inviting, with a deep amber color.

Common mistakes

One common mistake is lifting the lid too often to check on the chicken. Each time you open the slow cooker, heat escapes and adds to the cooking time. Another is using chicken breasts instead of thighs — breasts dry out in the slow cooker.

Also, don't skip the rest time after cooking; it allows the juices to redistribute. Finally, if the sauce is too thin, don't serve it as is — reduce it on the stovetop for a thicker glaze.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) in the thickest part. It should be fork-tender and easily pull apart.

The sauce should be thickened and glossy, clinging to the chicken. If the sauce is still thin, you can transfer it to a saucepan and simmer until reduced. The dish is best served hot, right from the slow cooker.

  • Poultry: 165°F (74°C) in the thickest part
