Before you start

Before starting, ensure the chicken thighs are thawed if frozen. Measure out the spiced tomato-ginger makhani puree, mince the ginger and garlic, and have the ghee and cream at the ready. The slow cooker should be clean and dry.

No need to preheat the crock; the ingredients will come to temperature together. If using a liner, place it in the slow cooker now. This is a true dump-and-forget recipe, so all prep is done before the lid goes on.

Ingredients at a glance (6)
  • 6 boneless skinless chicken thighs
  • 2 cups spiced tomato-ginger makhani puree
  • 1 tbsp fresh ginger, minced
  • 4 cloves garlic, minced
  • 3 tbsp ghee
  • 1 cup heavy whipping cream

Instructions

Layer and Pour

  1. Layer the chicken
Place the chicken thighs in the bottom of the slow cooker in a single layer. They can overlap slightly, but try to keep them even for uniform cooking.
Look for The thighs cover the bottom of the crock in one even layer.
Tip Pat the chicken dry with paper towels before adding for better sauce adherence.
  2. Add the aromatics
Sprinkle the minced ginger and garlic over the chicken thighs, spreading them evenly across the surface.
Look for The garlic and ginger are scattered evenly over the meat.
Tip Use a microplane for the ginger and garlic to get a fine mince quickly.

The chicken thighs sit in a single layer at the bottom of the crock, topped with minced ginger and garlic. The spiced tomato puree is poured over, creating a thick, reddish-orange blanket. Golden ghee pools on top, and the cream swirls in with white streaks against the red. The raw ingredients look vibrant and fresh, with a pungent aroma of garlic and ginger.

Simmer and Transform

  1. Pour the tomato puree
Pour the spiced tomato-ginger makhani puree over the chicken and aromatics. Use a spoon to spread it so the chicken is mostly covered.
Look for The puree coats the chicken in a thick, reddish-orange layer.
Tip If the puree is very thick, add a splash of water to help it spread.
  2. Add the ghee
Spoon the ghee over the top of the tomato puree. The ghee will melt and enrich the sauce as the slow cooker heats.
Look for Golden pools of ghee sit on top of the red sauce.
Tip If ghee is solid, melt it briefly in the microwave for easier spooning.
  3. Swirl in the cream
Pour the heavy whipping cream over the top. Use a spoon to gently swirl it into the sauce, but do not fully mix — leave some streaks.
Look for The cream creates a marbled pattern against the red tomato sauce.
Tip Swirl gently to keep the cream from curdling.

The slow cooker is covered and the heat is on low. Over the next few hours, the sauce will gently bubble and the chicken will slowly cook. The kitchen fills with a warm, spiced aroma. The cream and ghee melt into the sauce, creating a silky emulsion. The chicken turns from pink to opaque white, then to a deep golden brown as it braises in the spicy tomato gravy.

Finish and Serve

  1. Cook on low
Cover the slow cooker and cook on low for 6 hours, or until the chicken is tender and reaches an internal temperature of 165°F (74°C).
Look for The sauce is bubbling gently and the chicken is fork-tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Do not lift the lid during cooking — the heat escapes and slows cooking.
  2. Stir and serve
Once cooked, stir the sauce to combine the cream and ghee into a silky gravy. Serve the chicken and sauce over steamed basmati rice with warm naan on the side.
Look for The sauce is glossy and orange-red, and the chicken is coated.
Tip Taste and adjust salt if needed before serving.

After six hours, the sauce is bubbling gently, and the chicken is fork-tender, falling apart with a gentle push. The sauce has thickened to a velvety consistency, glossy from the ghee and cream.

The color is a rich, deep orange-red. A spoonful scooped up reveals tender chicken coated in silky gravy, with steam rising and the aroma of spices and butter filling the air.

Common mistakes

One common mistake is lifting the lid to check on the chicken, which lets out heat and extends cooking time. Resist the urge. Another is using chicken breasts instead of thighs; breasts can dry out in the slow cooker, so if you do substitute, reduce the cook time to 3–4 hours and check temperature early.

Also, don't skip the ghee — it's what gives the sauce its signature richness. And be sure to use heavy cream, not milk or half-and-half, to avoid curdling.

How to tell it’s done

The chicken is done when it is fork-tender and easily shreds, and the internal temperature reads 165°F (74°C) on an instant-read thermometer inserted into the thickest part of a thigh.

The sauce will be thickened and slightly reduced, with a glossy sheen from the ghee and cream. The color should be a deep, rich orange-red, and the aroma will be warm and spicy. If the sauce seems too thin, cook uncovered for an additional 15–30 minutes to reduce.

  • Poultry: 165°F (74°C) in the thickest part
