Tips for success

For the most flavor, choose a barbecue sauce that you genuinely enjoy eating on its own, since it is the backbone of the dish. If you prefer a spicier kick, stir in a few dashes of hot sauce or a pinch of cayenne before cooking.

To make the sauce extra glossy, you can spoon some of the liquid from the slow cooker into a small saucepan, simmer it for 5 to 10 minutes until it thickens, and then pour it back over the ribs before serving.

If you have time, let the cooked ribs rest in the sauce for 10 to 15 minutes before serving. This allows the meat to soak up even more flavor and makes it easier to handle.

When serving, use a slotted spoon to lift the ribs out, leaving the excess sauce behind, then spoon a little extra sauce over the top. The peaches are delicious mashed into the sauce and served alongside the meat.

Variations

  • Spicy Peach Ribs: Stir 1 teaspoon of chipotle powder or 2 tablespoons of chopped chipotle peppers in adobo into the barbecue sauce before pouring over the ribs. The heat balances the sweet peaches and adds a smoky kick.
  • Apple Bourbon Ribs: Replace the peaches with 4 cups of sliced peeled apples, such as Honeycrisp or Fuji. Add 1 teaspoon of ground cinnamon to the barbecue sauce for a warm, autumnal twist.
  • Honey Garlic Ribs: Swap the honey-hickory barbecue sauce for a mixture of 1/2 cup honey, 1/4 cup soy sauce, 4 minced garlic cloves, and 1 tablespoon of rice vinegar. Omit the bourbon and add 1/2 cup of chicken broth instead.
  • Peach Chipotle Ribs: Add 2 tablespoons of adobo sauce from canned chipotle peppers to the barbecue sauce along with 1 teaspoon of smoked paprika. This adds a deep, smoky heat that complements the sweet peaches.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days. The sauce will thicken; reheat with a splash of water to loosen.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or microwave.
Reheat
Reheat in a saucepan over medium heat, adding a splash of water or apple juice to thin the sauce. Microwave in 30-second bursts, stirring between, until hot.

Store leftover ribs in an airtight container in the refrigerator for up to 4 days. Reheat gently in the microwave or on the stovetop until heated through. The sauce will thicken as it cools, so you may want to add a splash of water or apple juice when reheating.

This dish can be assembled up to 24 hours in advance. Layer the ribs, peaches, bourbon, and barbecue sauce in the slow cooker insert, cover, and refrigerate. When ready to cook, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time since the ingredients start cold.

Serving ideas

Serve these ribs straight from the slow cooker with a large spoon for the sauce. They pair beautifully with classic Southern sides like cornbread, collard greens, or a simple coleslaw.

The sweet and smoky sauce also works well spooned over mashed potatoes or rice to catch every drop. For a low-fuss meal, set out the slow cooker and let everyone help themselves, with plenty of napkins on hand.

For a more polished presentation, transfer the ribs to a platter and spoon the peaches and sauce over the top. Garnish with a few fresh peach slices or a sprinkle of chopped parsley if you like, though the dish is delicious as is.

The tender meat can be pulled apart with forks for sandwiches, or served whole for a hearty dinner. Leftovers are just as good the next day, cold or reheated.

Frequently asked questions

Can this recipe be made with bone-in ribs?
Yes, bone-in country-style ribs work well. They may take slightly longer to become tender, so check at the 6-hour mark and add 30 minutes if needed. Remove the bones before serving, as they will slip out easily when the meat is fully cooked.
Why are the ribs still tough after cooking?
Tough ribs usually mean they need more time. The slow cooker may have been opened too often, or the heat setting was too low. Continue cooking in 30-minute increments until a fork slides in easily. Remember that country-style ribs are a leaner cut and benefit from a longer cook to break down connective tissue.
Can this be cooked on high instead of low?
Yes, cooking on high for 4 to 5 hours works, but the meat may be slightly less tender than when cooked on low. If using high, check for doneness earlier to avoid overcooking. The sauce may also reduce a bit more, so you can add a splash of water if it gets too thick.
What can be used instead of bourbon?
For a non-alcoholic version, use apple juice or unsweetened apple cider mixed with 1 teaspoon of vanilla extract. The flavor will be slightly sweeter and less complex, but still delicious. Alternatively, use a splash of peach nectar for extra fruitiness.
Can leftover sauce be used for other dishes?
Absolutely. The leftover sauce is great brushed on grilled chicken, tossed with pulled pork, or stirred into baked beans. Store it in the refrigerator for up to a week or freeze for up to 3 months.

Slow Cooker Georgia Peach Bourbon Ribs

Slow cooker ribs with peaches and BBQ sauce, glistening and tender in a black crockpot

Ingredients

  • 3 lb boneless country-style pork ribs
  • 4 cups sliced ripe peaches (about 4 peaches)
  • 1/4 cup bourbon
  • 1 1/2 cups honey-hickory barbecue sauce

Instructions

  1. Place the boneless country-style pork ribs in the bottom of a 6-quart slow cooker in a single layer, overlapping slightly if needed. Spread them evenly so they cook uniformly.
  2. Scatter the sliced peaches over the ribs, spreading them out so they are distributed evenly across the surface. They will soften and release juice as they cook.
  3. Drizzle the bourbon evenly over the peaches and ribs. The bourbon adds a warm, sweet note that will mellow as it cooks.
  4. Pour the honey-hickory barbecue sauce over the entire surface of the ribs and peaches. Use a spoon or spatula to spread it into an even coating, making sure every piece is covered.
  5. Cover the slow cooker with its lid and cook on LOW for 6 to 7 hours, or on HIGH for 4 to 5 hours, until the ribs are fork-tender and easily pull apart. The peaches will soften and the sauce will thicken slightly. Let it rest for 3 minutes before slicing.
  6. After the cooking time, check the ribs by piercing one with a fork. The meat should be very tender and nearly falling apart. If not, continue cooking for another 30 minutes and check again.
  7. Turn off the slow cooker and let the ribs rest in the sauce for at least 3 minutes. This allows the juices to redistribute and the meat to become even more tender.
  8. Using a serving fork, lift the ribs and peaches out of the slow cooker and place them on a serving platter or individual plates. Spoon extra sauce over the top.
