Before you start

Before starting, cut the chicken thighs into bite-size pieces and measure all the sauce ingredients. Grate the ginger and mince the garlic so they're ready to whisk into the sauce.

Cook the rice according to package directions, or use leftover rice. Have the broccoli florets washed and cut, and the sesame seeds toasted if they're not already. The slow cooker insert should be clean and dry before adding the ingredients.

Ingredients at a glance (11)
  • 2 lb boneless, skinless chicken thighs, cut into bite-size pieces
  • 1/2 cup hoisin sauce
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 3 tbsp brown sugar, packed
  • 1 tbsp fresh ginger, grated
  • 4 cloves garlic, minced
  • 6 whole dried red chilies
  • 4 cups broccoli florets
  • 4 cups cooked white rice, for serving
  • 1 tbsp toasted sesame seeds, for garnish

Instructions

Phase 1: Build and Cook

  1. Build the Sauce Base
In the slow cooker insert, whisk together the hoisin sauce, soy sauce, rice vinegar, brown sugar, grated ginger, and minced garlic until the sugar dissolves. Add the bite-size chicken thighs and toss to coat every piece in the sauce. Scatter the whole dried red chilies over the top.
Look for The chicken is evenly coated in a dark, glossy sauce with visible bits of ginger and garlic.
Tip Cut the chicken into uniform 1-inch pieces so they cook evenly and soak up the sauce.
  2. Cover and Slow Cook
Secure the lid on the slow cooker. Cook on HIGH for 3 hours, without opening the lid during the first 2 hours to keep the heat steady. The chicken will become tender and the sauce will thicken into a sticky glaze.
Look for After 3 hours, the chicken is fork-tender and the sauce has reduced and turned glossy.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Resist the urge to peek; lifting the lid lets out heat and slows cooking.

After the 3-hour cook, the kitchen smells sweet and spicy with ginger and garlic. The chicken is deeply coated in a dark, glossy sauce that has thickened slightly, and the meat is tender enough to pull apart with a fork.

The sauce should not be watery; it should cling to the chicken like a glaze. If it looks thin, let it cook uncovered for a few extra minutes.

Phase 2: Broccoli and Finish

  1. Add Broccoli and Finish
Uncover the slow cooker and gently stir in the broccoli florets. Replace the lid and cook on HIGH for an additional 15–20 minutes, until the broccoli is crisp-tender and bright green. The sauce should cling to the chicken and broccoli.
Look for The broccoli is tender but still has a slight crunch, and the sauce coats it evenly.
Tip Cut the broccoli into similar-size florets so they cook at the same rate.

Once the broccoli is added and cooked for 15–20 minutes, it should be bright green and crisp-tender. The sauce has turned even more glossy and coats the broccoli florets evenly. The overall aroma is now a blend of savory hoisin, ginger, and the slight smokiness of the dried chilies. Everything looks sticky and inviting, ready to be spooned over rice.

Phase 3: Serve

  1. Serve Over Rice
Spoon the hot rice into bowls. Top with the General Tso's chicken and broccoli, spooning extra sauce from the slow cooker over each serving. Sprinkle with toasted sesame seeds and serve immediately.
Look for The dish is glossy, fragrant with ginger and chilies, and the sesame seeds add a nutty finish.
Tip For extra heat, leave a few dried chilies in the serving bowl or remove them for a milder dish.

When served, the dish is a beautiful mound of glossy chicken and broccoli over steaming white rice, finished with a sprinkle of toasted sesame seeds. The sauce glistens under the light, and the chilies add a pop of red. The texture is tender chicken, crisp-tender broccoli, and sticky sauce that coats every bite.

Common mistakes

One common mistake is opening the slow cooker lid too often during the first two hours. Every time the lid is lifted, heat escapes and extends the cooking time. Another pitfall is adding the broccoli too early—it will turn mushy and lose its vibrant color.

Also, don't skip the browning step for the chicken; while this recipe doesn't require it, you can sear the thighs in a skillet first for deeper flavor, but it's not necessary. Finally, be careful with the dried chilies; they can burst and release intense heat, so remove them before serving if you want a milder dish.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) and is fork-tender—it should shred easily with a fork. The sauce should be thick enough to coat the back of a spoon and cling to the chicken.

The broccoli should be crisp-tender, bright green, and easily pierced with a fork but not mushy. If the sauce looks thin, cook uncovered for an additional 10–15 minutes to reduce it.

  • Poultry: 165°F (74°C) in the thickest part
