Before you start

Before beginning, ensure the slow cooker is placed on a stable, heat-resistant surface away from any water or clutter. Gather all ingredients and measure them accurately. Ensure the pork chops are fresh and have been stored in the refrigerator until the moment of preparation.

If using frozen pork chops, thaw them completely in the refrigerator overnight before proceeding with the recipe to ensure food safety and even cooking throughout the entire process.

Ingredients at a glance (4)
  • 4 pieces pork chops
  • 2 tbsp honey
  • 1 tsp red pepper flakes
  • 1/2 cup hoisin sauce

Instructions

Preparation

  1. Prepare the slow cooker
Place the raw pork chops into the bottom of the slow cooker insert. Ensure they are laid out in a single layer for even cooking throughout the process.
Look for pork chops are in a single layer
Tip Pat the pork chops dry with paper towels before adding them to the cooker for better browning potential.

At this stage, the pork chops are arranged in the slow cooker, ready to be seasoned. Ensure the chops are laid out flat and are not overlapping too much. The surface should look clean and organized, with the pork evenly distributed across the bottom of the insert.

This sets the foundation for uniform cooking and ensures that the sauce will be able to circulate and coat the meat effectively during the long cooking cycle.

Seasoning

  1. Add seasoning and sauce
Drizzle the honey over the pork chops. Sprinkle the red pepper flakes evenly across the meat. Pour the hoisin sauce over the top, ensuring it coats the chops.
Look for sauce covers the pork chops
Tip Use a silicone spatula to scrape every bit of hoisin from the measuring cup to avoid any waste.

The pork chops are now covered with the honey, red pepper flakes, and hoisin sauce. The sauce should appear thick and glossy, coating the meat. There should be no dry spots on the surface of the pork. The aroma will be mild at this point, but as the heat begins to work, the sugar in the honey and the aromatics in the hoisin will start to meld together into a fragrant, sticky glaze.

Cooking

  1. Cook and serve
Cover the slow cooker and cook on low for 4 to 6 hours until the pork reaches 145°F (63°C). Let the pork chops rest for at least 3 minutes before serving on a plate.
Look for pork is tender and internal temp is reached
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Test the internal temperature using a meat thermometer inserted into the thickest part of the chop.

After the cooking time, the pork chops will look dark, glazed, and tender. The sauce will have thinned slightly as it mixed with the natural juices from the pork, creating a rich, savory liquid at the bottom of the cooker. The meat should be soft and easily pulled apart with a fork. Check the internal temperature to ensure it has reached 145°F (63°C) before turning off the slow cooker and preparing to serve.

Common mistakes

A common mistake is overcrowding the slow cooker, which can prevent the sauce from coating the meat properly and may lead to uneven cooking. Avoid lifting the lid frequently during the cooking process, as this releases heat and steam, significantly increasing the time required for the pork to reach a safe temperature.

Additionally, ensure the pork is not cooked for too long, as even in a slow cooker, lean pork chops can become dry if left on high heat for an excessive duration.

How to tell it’s done

The pork chops are done when they are tender enough to be easily pierced with a fork and have reached an internal temperature of at least 145°F (63°C). Use a meat thermometer to check the thickest part of the chop, avoiding the bone if present.

Once the temperature is confirmed, the meat should be removed from the cooker and allowed to rest for at least 3 minutes, which helps the juices redistribute, ensuring each bite is moist and flavorful.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
