Before you start

Before beginning, ensure the slow cooker insert is clean and dry. Prepare the chicken wings by separating the drumettes from the flats if they are sold as whole wings.

Have the ginger minced and the red pepper flakes measured out to streamline the assembly process. Clear sufficient counter space to work comfortably and ensure all garnishes are prepped so they can be added immediately upon serving for the best presentation.

Ingredients at a glance (6)
  • 2 lb chicken wings, split and tips removed
  • 1 tbsp minced ginger
  • 1 tsp crushed red pepper flakes
  • 1 cup sweet and spicy Asian sauce, store-bought or made ahead
  • Sesame seeds, for serving
  • Scallions, sliced, for serving

Instructions

Initial Assembly

  1. Assemble the wings
Place the raw chicken wings into the bottom of the slow cooker insert. Ensure they are arranged in an even layer to promote consistent cooking throughout the process.
Look for Wings should be spread out evenly.
Tip Pat the wings dry with paper towels before adding them to remove excess moisture for better sauce adhesion.

At this stage, the raw wings are nestled at the base of the slow cooker. The ginger and red pepper flakes are distributed on top, creating a foundation for flavor. Ensure the wings are not piled too high so that the heat can circulate effectively and the sauce can distribute evenly across all pieces during the cooking process.

Sauce Infusion

  1. Season and glaze
Scatter the minced ginger and crushed red pepper flakes evenly over the chicken wings. Pour the sweet and spicy Asian sauce over the top, ensuring all pieces are well coated.
Look for Sauce should cover the wings.
Tip Use a silicone spatula to scrape every bit of sauce from the measuring cup.

The sauce has been poured over the wings, coating every surface. The aromatics are beginning to mingle with the sauce. Check that the wings are mostly submerged or well-coated to prevent any dry spots.

The slow cooker is now ready to begin the long, gentle cooking process that will transform the raw ingredients into a cohesive dish.

Final Glazing

  1. Slow cook and finish
Cover the slow cooker and cook on high for 3 to 4 hours, or on low for 6 to 8 hours. Cook until the internal temperature of the chicken reaches 165°F (74°C). Garnish with sesame seeds and sliced scallions before serving warm.
Look for Wings should be tender and glazed.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the sauce is too thin after cooking, remove the wings and reduce the sauce in a pan on the stove.

The wings are now fully cooked, tender, and coated in a rich, glossy sauce. The kitchen should smell savory and slightly spicy. Before serving, verify the internal temperature of 165°F (74°C). The final step is to garnish with fresh scallions and sesame seeds, which add a necessary crunch and brightness to the finished dish.

Common mistakes

A common mistake is overcrowding the slow cooker, which can lead to uneven cooking and mushy textures. Ensure the wings are in a single layer or slightly overlapping.

Another error is checking the wings too frequently, which allows heat to escape and increases the total cooking time. Always keep the lid closed as much as possible to maintain a consistent temperature throughout the cooking cycle for optimal results.

How to tell it’s done

The chicken wings are fully cooked when they reach an internal temperature of 165°F (74°C) as measured by a meat thermometer inserted into the thickest part of the meat without touching the bone.

The meat should be tender and pull away from the bone with ease. The sauce should be thickened and glossy, clinging to the wings rather than pooling at the bottom of the slow cooker insert.

  • Poultry: 165°F (74°C) in the thickest part

Coming up in Part 3: common questions
