Before you start

Before beginning, ensure your slow cooker is clean and placed on a stable, heat-resistant surface. Remove the beef from its packaging and pat it dry with paper towels to ensure the seasoning adheres properly. Gather all your ingredients so they are within reach.

It is helpful to have your tongs and forks ready nearby so you do not have to search for them once your hands are coated in spices. Ensure you have adequate space in your refrigerator if you plan to store leftovers immediately after cooking.

Ingredients at a glance (4)
  • 3 lb beef chuck roast
  • 4 oz pickled jalapenos
  • 1 packet taco seasoning
  • 1 cup beef broth

Instructions

Initial Setup

  1. Prepare the Slow Cooker
Place the beef chuck roast into the insert of a 6-quart slow cooker. Ensure the meat is lying flat for even cooking throughout the process.
Look for The beef is positioned at the bottom of the slow cooker.
Tip If the roast is very large, cut it into two or three large chunks to ensure it fits comfortably in the cooker.

The beef should be placed centrally in the slow cooker. Ensure the roast is not resting against the very top edge of the insert to allow for even heat circulation. The base of the cooker should be clean and the power cord positioned safely away from the edge of the counter.

Seasoning and Liquid

  1. Add Aromatics and Seasoning
Scatter the pickled jalapenos over the top of the beef. Sprinkle the taco seasoning packet evenly over the meat, followed by pouring the beef broth into the cooker.
Look for The seasoning and jalapenos are evenly distributed over the beef.
Tip Pouring the broth around the sides helps keep the seasoning on top of the meat rather than washing it all away immediately.

Check that the taco seasoning is distributed evenly across the entire surface of the beef. The jalapenos should be scattered across the top, and the broth should be poured gently into the bottom of the insert. The liquid level should come up about halfway around the roast.

Cooking and Shredding

  1. Cook and Shred
Cover the slow cooker and set to low heat for 8 hours. Once finished, remove the beef, ensure it reaches at least 145°F (63°C), and let it rest for 10 minutes before shredding with two forks.
Look for The beef is extremely tender and pulls apart easily with a fork.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Discard any large pieces of excess fat after shredding to keep the final texture consistent.

After the full cooking time, the beef should be dark, tender, and easily pierced with a fork. It should have released a significant amount of its own juices, mixing with the broth. After resting, the meat should pull apart into long, uniform strands without any tough resistance.

Common mistakes

A common mistake is overcrowding the slow cooker with too much liquid, which can lead to a watery result rather than a concentrated, flavorful sauce. Stick to the recommended amount of broth.

Another error is checking the meat too frequently; every time you lift the lid, you release valuable heat and steam, which significantly increases the total cooking time.

Avoid trimming away too much fat before cooking, as this rendered fat is crucial for keeping the roast moist during the long, slow heat exposure.

How to tell it’s done

The beef is considered done when it reaches an internal temperature of 145°F (63°C) and is tender enough to shred effortlessly with two forks. The meat should be falling apart at the touch of a fork.

If the beef still feels resistant or tough when you attempt to shred it, continue cooking on low for an additional 30 to 60 minutes. Proper rest time is essential to allow the juices to redistribute throughout the meat, ensuring the final shredded texture is as succulent as possible.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
