Tips for success

For the most tender beef, always cut against the grain when cubing the brisket. This shortens the muscle fibers so they become more tender during cooking.

If time allows, sear the beef cubes in a hot skillet before adding to the slow cooker for extra depth of flavor, though the video does not show this step.

Toasting the cumin seeds in a dry skillet over medium heat for a minute until fragrant intensifies their flavor. You can also use ground cumin, but use half the amount.

If the sauce is too thick at the end, stir in a splash of beef broth or water to reach the desired consistency. Taste before serving and adjust salt and pepper.

Variations

  • Chicken Saag: Replace the beef brisket with boneless, skinless chicken thighs, cut into chunks. Cook on low for 6 hours or until chicken is tender and cooked through. No need to rest the meat.
  • Vegetarian Saag: Omit the beef and add 2 cups of paneer cubes or chickpeas. Cook on low for 4 hours, or until the spinach is wilted and the sauce is heated through. Adjust seasoning to taste.
  • Spicy Saag: Add 1-2 finely chopped green chilies or 1 teaspoon of red chili flakes along with the garlic and ginger for extra heat. Adjust the amount to suit your spice preference.
  • Creamy Coconut Saag: Replace the Greek yogurt with full-fat coconut milk and use vegan butter. Add a tablespoon of curry powder for a different flavor profile. This version is dairy-free and equally delicious.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will meld and deepen overnight. Reheat gently on the stovetop or in the microwave, adding a splash of water if needed to loosen the sauce. The curry also freezes well for up to 3 months.

This recipe is ideal for meal prep. Assemble all ingredients in the slow cooker insert the night before, cover, and refrigerate.

In the morning, place the insert in the slow cooker base and cook on low as directed. You can also cook the full recipe and freeze portions for later. Thaw overnight in the refrigerator before reheating.

Serving ideas

Serve this garlic butter spinach saag beef brisket over steamed basmati rice or with warm naan bread to soak up the creamy sauce. A side of cucumber raita or a simple green salad would complement the richness. For a low-carb option, cauliflower rice works beautifully.

Garnish with a dollop of yogurt, fresh cilantro, or a squeeze of lemon juice to brighten the flavors. This dish pairs well with a crisp lager or a fruity red wine.

It's a complete meal in itself, but you can also serve it alongside roasted vegetables or a lentil soup for a larger spread.

Frequently asked questions

Can this recipe be made with frozen spinach?
Yes, frozen spinach can be used. Thaw it first and squeeze out as much water as possible to prevent a watery sauce. Add it in the last hour of cooking, as it doesn't need as much time to wilt as fresh spinach.
Why does the yogurt sometimes curdle in the slow cooker?
Curdling can happen if the yogurt is low-fat or if the heat is too high. Use full-fat Greek yogurt and cook on low. Also, avoid stirring during cooking; the layers help stabilize the sauce. If curdling occurs, blending the sauce with an immersion blender can smooth it out.
Can this dish be cooked on high instead of low?
Yes, but the beef may not become as tender. Cook on high for 4-5 hours, checking for doneness. The low-and-slow method is recommended for the best texture, but high heat can work in a pinch.
What is the best cut of beef for this recipe?
Brisket is ideal because its high collagen content breaks down into gelatin, making the meat fork-tender. Beef chuck or round are good alternatives. Avoid lean cuts like sirloin, which can become dry.
Can this recipe be made in an Instant Pot?
Yes, use the slow cooker function on low for 8 hours, or pressure cook on high for 45 minutes with a natural release. The texture may differ slightly, but it will still be flavorful and tender.

Prep 15 minCook 8 hTotal 8 h 15 minServes 6
Slow cooker filled with creamy spinach saag and tender beef brisket, topped with a spoonful of sauce.

Ingredients

  • 2 lb beef brisket, cut into 1-inch cubes
  • 4 cups fresh baby spinach
  • 1 tbsp fresh ginger, grated
  • 4 cloves garlic, minced
  • 1 tsp toasted cumin seeds
  • 1/2 cup plain Greek yogurt
  • 4 tbsp garlic herb butter, cut into medallions
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions

  1. Place the cubed beef brisket in the bottom of a 6-quart slow cooker. Sprinkle with salt and pepper. Add the baby spinach on top, then scatter the grated ginger, minced garlic, and toasted cumin seeds over the spinach.
  2. Dollop the Greek yogurt over the top of the layered ingredients. Place the medallions of garlic herb butter evenly over the surface. Do not stir.
  3. Cover the slow cooker and cook on low for 8 hours, or until the beef is fork-tender and easily shreds. Avoid lifting the lid during cooking to maintain steady heat. Let it rest for 3 minutes before slicing.
  4. After 8 hours, check the beef by piercing a cube with a fork. It should be very tender and easily pull apart. If not, continue cooking for another 30 minutes and check again.
  5. Gently stir the curry to combine the wilted spinach and creamy sauce. Taste and adjust seasoning with salt and pepper if needed. Serve hot over steamed basmati rice with warm naan on the side.
