Tips for success
For the best flavor, use a high-quality beef chuck roast with good marbling. The fat renders during cooking and keeps the meat moist.
If you have time, sear the roast in a hot skillet before adding it to the slow cooker—this adds a deeper flavor, but it is not required. The recipe works beautifully without it.
Do not add any liquid to the slow cooker. The beef and vegetables release enough moisture, and the butter creates a rich gravy.
If you find the gravy too thin at the end, you can thicken it with a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water) stirred in and cooked for 15 minutes. But usually it is just right.
Variations
- Herb Swap: Use a different herb blend in the compound butter—rosemary, thyme, or oregano all work well. Or stir in a teaspoon of Dijon mustard for extra tang.
- Add Mushrooms: Add 8 oz of cremini mushrooms, halved, along with the shallots and carrots. They will absorb the butter and add an earthy flavor.
- Spicy Kick: Add a pinch of red pepper flakes to the compound butter, or stir in a chopped chipotle pepper in adobo for a smoky heat.
- Wine Braise: Deglaze the slow cooker with 1/2 cup of dry red wine before adding the roast, if you like. This adds depth, but the recipe works without it.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed to loosen the gravy.
- Freezer
- Freeze the shredded beef and vegetables in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot. Or microwave in 30-second bursts, stirring between.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The beef and vegetables will keep well, and the gravy will thicken as it cools.
Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if needed to loosen the sauce.
This recipe is ideal for making ahead. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. You can also cook the roast fully, shred it, and store it in the refrigerator for up to 4 days. Reheat gently before serving.
Serving ideas
Serve this chuck roast over a bed of buttered egg noodles, as shown, or with mashed potatoes, polenta, or crusty bread to soak up the gravy. The shallots and carrots are already in the pot, so you have a complete meal in one dish. A simple green salad on the side adds freshness.
For a heartier meal, add a side of roasted green beans or a crisp cucumber salad. The rich, buttery flavors pair well with something bright and acidic. Leftovers are excellent in sandwiches or over rice. Garnish with fresh parsley if you like, though it is not necessary.

Slow Cooker Garlic Butter Chuck Roast with Shallots and Carrots

Ingredients
- 3 1/2 lb beef chuck roast
- 8 whole shallots, peeled
- 1 lb baby carrots
- 4 tbsp garlic-herb compound butter (cowboy butter)
- 12 oz buttered egg noodles, for serving
Instructions
- Place the beef chuck roast in the center of the slow cooker. Scatter the peeled whole shallots and baby carrots around the roast, tucking them into the sides so they surround the meat evenly.
- Place the four medallions of garlic-herb compound butter on top of the roast, spacing them evenly. They will melt as the cooker runs, basting the meat and vegetables.
- Cover the slow cooker and cook on low for 8 to 10 hours, until the beef is fork-tender and easily shreds. The shallots should be caramelized and the carrots tender. Let it rest for 3 minutes before slicing.
- Once the roast is tender, remove it to a cutting board and let it rest for at least 3 minutes. Then shred the beef with two forks, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir gently into the buttery gravy.
- Spoon the shredded beef, shallots, and carrots over warm buttered egg noodles. Ladle extra gravy over the top and serve immediately.
