Before you start

Before beginning, ensure the slow cooker bowl is clean and dry. Remove any giblets from the cavity of the chicken and pat the bird thoroughly dry with paper towels to ensure the seasonings adhere properly to the skin.

Take the chicken out of the refrigerator about 20 minutes before starting so it is not ice-cold when it goes into the pot, which helps with more consistent cooking times. Prepare your work area by clearing space, and keep a meat thermometer nearby to check the final temperature once the cooking time has elapsed.

Ingredients at a glance (6)
  • 1 whole chicken, approximately 3-4 lbs
  • 1 head garlic, halved crosswise
  • 4 sprigs fresh thyme
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 2 tbsp olive oil

Instructions

Preparation and Aromatics

  1. Prepare the Chicken
Place the raw whole chicken breast-side up into the bowl of the slow cooker. Ensure the chicken is positioned stably in the bottom of the vessel to allow for even heat distribution during the cooking process.
Look for Chicken is centered in the slow cooker
Tip Ensure the chicken is fully thawed before placing it in the slow cooker for even cooking.
  2. Add Aromatics
Tuck the halved garlic head and the fresh thyme sprigs around the sides of the chicken. Distributing these aromatics around the base allows the flavors to infuse the meat as the juices release.
Look for Garlic and thyme are tucked snugly
Tip Peel the outer papery layers of the garlic head to keep the slow cooker clean.

At this phase, the chicken is securely placed in the slow cooker, surrounded by the garlic and thyme. Everything is ready for the seasoning step. Ensure the chicken is breast-side up to promote even cooking.

The aromatics should be tucked firmly against the chicken to ensure they release their fragrance into the meat during the long, slow heating process.

Seasoning the Roast

  1. Season and Oil
Sprinkle the paprika and kosher salt evenly over the top of the chicken. Carefully pour the olive oil over the surface of the chicken, ensuring it coats the skin to help promote browning and moisture retention.
Look for Skin is glistening with oil and seasonings
Tip Use a brush to distribute the oil if it does not cover the skin naturally.

The chicken is now coated with paprika, salt, and olive oil. The skin should look glistening and uniform. The paprika adds a subtle color and depth, while the oil ensures the skin does not become tough. Verify that the seasonings are distributed evenly across the entire surface of the bird before you secure the lid to begin the cooking cycle.

Slow Cooking and Resting

  1. Cook and Rest
Cover the slow cooker and cook on low for 4 to 6 hours or high for 2 to 3 hours. Verify the chicken reaches an internal temperature of 165°F (74°C) in the thickest part of the thigh. Once cooked, let the chicken rest for 10 minutes before carving.
Look for Juices run clear and meat pulls away from bone
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a meat thermometer inserted into the thickest part of the thigh to ensure safety.

After the cooking time, the chicken is fully cooked, tender, and fragrant. The meat should pull away from the bone easily. Before serving, the chicken must rest on a warm plate for 10 minutes. Check the internal temperature with a thermometer to confirm it has reached 165°F (74°C) to ensure it is perfectly safe and ready to be carved for the table.

Common mistakes

A common mistake is overcrowding the slow cooker with too many additional vegetables, which can increase the water content and result in a boiled rather than roasted texture. Stick to the specified aromatics to maintain the right moisture balance.

Another error is lifting the lid too frequently, which releases the trapped heat and steam, significantly extending the cooking time and potentially leading to uneven results. Finally, failing to let the chicken rest after cooking will cause the juices to run out immediately upon carving, resulting in dry, less flavorful meat.

How to tell it’s done

The chicken is done when the skin is golden and the juices run clear when the thigh is pierced. Most importantly, use a meat thermometer to check the thickest part of the thigh, avoiding the bone. The chicken must reach a safe internal temperature of 165°F (74°C).

The meat should be tender enough to pull away from the bone easily when carved. Resting the chicken for at least 10 minutes after removing it from the slow cooker is critical, as this allows the juices to redistribute throughout the meat, ensuring every slice remains moist.

  • Poultry: 165°F (74°C) in the thickest part
