Tips for success
For the deepest onion flavor, let the onions cook undisturbed for the first few hours. This allows them to release their natural sugars and caramelize slowly.
If you prefer a thicker jus, remove the beef and onions after cooking, then simmer the liquid on the stovetop until reduced by a quarter. This concentrates the flavor and makes the sauce cling to the meat.
To make baguette crostini, slice a baguette into 1/2-inch rounds, brush with olive oil, and toast in a 400°F (200°C) oven for 5–7 minutes, until golden and crisp.
These crostini are perfect for soaking up the jus. For a more decadent version, rub the toasted bread with a cut garlic clove before serving.
Variations
- Mushroom Onion Pot Roast: Add 8 oz sliced cremini mushrooms along with the onions for an earthy depth. Sauté the mushrooms in butter before adding to the slow cooker to intensify their flavor.
- Red Wine Infusion: Replace 1/2 cup of the consommé with red wine, such as a dry Merlot or Cabernet Sauvignon. The wine adds a fruity complexity that pairs beautifully with the beef.
- Herb-Rubbed Roast: Before placing the beef in the slow cooker, rub it with a mixture of dried thyme, rosemary, and garlic powder. This adds an extra layer of aromatic flavor.
- Spicy French Onion Roast: Add 1 teaspoon of red pepper flakes or a splash of hot sauce to the consommé for a gentle heat that cuts through the richness of the cheese.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of beef broth if needed.
- Freezer
- Freeze the cooked beef and onions (without the cheese topping) in a freezer-safe container for up to 3 months.
- Reheat
- Reheat in a saucepan over medium heat, stirring occasionally, until warmed through. Add a little beef broth to loosen the sauce.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth if the mixture thickens too much.
This dish is ideal for making ahead. Prepare the recipe through step 4, then cool completely and refrigerate.
When ready to serve, reheat gently and add the Gruyère just before serving. The beef and onions can be made up to 2 days in advance.
Serving ideas
Serve the pot roast over toasted baguette crostini, allowing the jus to soak into the bread.
A simple green salad with a light vinaigrette balances the richness. For a more substantial meal, add roasted potatoes or a side of steamed green beans.
For a classic French onion soup experience, ladle the beef and onions into oven-safe bowls, top with a baguette slice and extra Gruyère, and broil until bubbly. This turns the pot roast into a soup-like dish that is perfect for cold evenings.

French Onion Soup Crockpot Pot Roast

Ingredients
- 4 yellow onions, thinly sliced
- 30 g butter
- 3 lb beef chuck roast
- 500 ml beef consommé
- 30 ml Worcestershire sauce
- Fresh thyme sprigs, to taste
- 150 g shredded Gruyère cheese
- Toasted baguette crostini, for serving
Instructions
- Place the sliced onions in the bottom of a 6-quart slow cooker. Dot with the butter. Season the beef chuck roast on all sides with salt and pepper, then set it on top of the onions. Pour the beef consommé and Worcestershire sauce around the roast. Scatter the fresh thyme sprigs over the top.
- Cover the slow cooker and cook on LOW for 8 hours, until the beef is fork-tender and the onions have melted into a sweet, silky jam. The roast should shred easily with two forks. Let it rest for 3 minutes before slicing.
- Remove the beef roast to a cutting board. Using two forks, shred the beef into large chunks, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir it into the onion jus.
- Sprinkle the shredded Gruyère cheese evenly over the beef and onions. Cover the slow cooker and let it sit for 5 minutes, until the cheese is fully melted and bubbly.
- Scoop the Gruyère-draped beef and onions over toasted baguette crostini, letting the rich onion jus soak into the bread. Serve immediately.
