Tips for success
For the best flavor, use a good-quality beef consommé and au jus. These are more concentrated than regular broth, giving the gravy a deep, savory richness. If you can't find au jus, use beef broth and add a teaspoon of Worcestershire sauce.
The whole-grain Dijon mustard is not just a flavoring — it also helps thicken the gravy slightly as it cooks. If you prefer a smoother sauce, whisk the gravy vigorously before serving.
This recipe is forgiving, so don't worry if the onions are a little thicker or the mustard a little more generous. The long cooking time means everything will meld together beautifully.
If you want a thicker gravy, you can mix a tablespoon of cornstarch with cold water and stir it into the pot during the last 30 minutes of cooking. For a brighter finish, add a squeeze of lemon juice or a splash of white wine vinegar just before serving — it will cut through the richness.
Variations
- Add Mushrooms: Sauté 8 oz sliced mushrooms in butter until golden and add them with the onions. The mushrooms soak up the gravy and add an earthy flavor that complements the beef.
- Make It Spicy: Stir in 1 teaspoon of smoked paprika and 1/2 teaspoon of cayenne pepper with the mustard for a smoky, spicy kick. Serve with pickled jalapeños on the side.
- Herb-Infused: Add 2 sprigs of fresh thyme and 1 bay leaf with the consommé. Remove before shredding. The herbs add a subtle, aromatic depth to the gravy.
- Horseradish Twist: Replace the Dijon with 2 tablespoons of prepared horseradish for a sharp, tangy flavor that pairs beautifully with the beef and onions.
Storage and make-ahead

- Reheat
- Reheat gently in a covered pot over low heat, adding a splash of broth or water to loosen the gravy if needed.
Store leftover roast and gravy in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, and the dish tastes even better the next day. Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the gravy has thickened too much. This is a great make-ahead meal for busy weeks.
You can assemble the entire dish in the slow cooker insert the night before, cover, and refrigerate. In the morning, simply place the insert in the slow cooker and cook as directed.
If you're short on time, you can also cook the roast fully, shred it, and store it in the refrigerator for up to 3 days. Reheat in a covered pot on the stove over low heat, stirring occasionally, until hot and bubbly.
Serving ideas
This French Onion Dijon Cream Roast is a complete meal when served over steamed rice, but it's also wonderful with mashed potatoes, egg noodles, or crusty bread for sopping up the gravy.
The creamy, tangy sauce pairs well with bright, crisp sides like a simple green salad with vinaigrette or roasted asparagus. For a heartier meal, add a side of sautéed mushrooms or glazed carrots.
When plating, spoon the rice onto the plate first, then pile the beef and gravy on top. Garnish with a sprinkle of fresh thyme or chives if you have them — the green adds a nice contrast and a fresh note. Leftovers are excellent in sandwiches, stuffed into baked potatoes, or stirred into pasta. The possibilities are endless, and the flavor is always rich and satisfying.

Slow-Cooker French Onion Dijon Cream Roast

Ingredients
- 3 1/2 lb beef bottom round roast
- 2 medium Vidalia onions, thinly sliced
- 1 cup beef consommé
- 1/2 cup sour cream
- 2 tbsp whole-grain Dijon mustard
- 1/2 cup au jus
- 1 tsp kosher salt
- 1/2 tsp black pepper
- Steamed white rice, for serving
Instructions
- Place the beef bottom round roast in the center of the slow cooker insert. Season both sides with kosher salt and black pepper. Scatter the sliced Vidalia onions over and around the roast, tucking some underneath for even flavor.
- Pour the beef consommé and au jus around the base of the roast, being careful not to rinse the seasoning off the meat. The liquid should come about a third of the way up the roast.
- Dollop the sour cream over the top of the roast and spread the whole-grain Dijon mustard over the surface. Do not stir — the ingredients will meld during cooking.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the beef is fork-tender and easily shreds. Resist the urge to lift the lid during cooking — each peek releases heat and adds time. Let it rest for 3 minutes before slicing.
- Once the roast is fork-tender, remove it to a cutting board and let it rest for at least 3 minutes. Then shred the beef into bite-sized pieces using two forks. Stir the cooking liquid to combine the onions, sour cream, and mustard into a smooth gravy. Return the shredded beef to the pot and stir to coat.
- Spoon the shredded beef and gravy over steamed white rice on warm plates. Serve hot, with extra mustard on the side if desired.
