Tips for success
For the most flavorful results, choose chicken thighs with the skin on. The skin renders fat during the sear and adds richness to the sauce.
If you prefer less fat, you can remove the skin after searing, but the meat will be slightly less moist. Always pat the chicken dry before seasoning to help achieve a good sear.
Caramelizing the onions properly is the most important step. Cook them slowly over medium heat, stirring occasionally, until they are a deep amber color.
This can take 20 minutes or more, but it's essential for developing the sweet, complex flavor that defines French onion dishes. If the onions start to burn, lower the heat and add a splash of broth.
Variations
- Cheesy Topping: During the last 15 minutes of cooking, lay slices of Gruyère or Swiss cheese over the chicken and cover the slow cooker until melted. For a bubbly top, transfer to a broiler-safe dish and broil briefly.
- Mushroom Addition: Add 8 oz sliced cremini mushrooms to the onions during the last 30 minutes of caramelizing. They will absorb the savory flavors and add an earthy depth to the gravy.
- Cider Twist: Replace half a cup of the beef broth with apple cider. The sweetness of the cider complements the caramelized onions and adds a subtle fruity note.
- Herb Swap: Use fresh rosemary instead of thyme, or a combination of both. Rosemary pairs beautifully with the onions and adds a piney aroma that elevates the dish.

Serving ideas
Serve the French onion chicken over creamy mashed potatoes, buttered egg noodles, or a bed of polenta to soak up the luscious gravy. Crusty bread is also a must for wiping the plate clean. A simple green salad with a bright vinaigrette balances the richness of the dish.
For a traditional touch, melt a slice of Gruyère or Swiss cheese over the chicken during the last few minutes of cooking and broil until bubbly.
This adds a cheesy, golden crust reminiscent of French onion soup. Garnish with fresh thyme leaves for a pop of color and aroma.

Slow Cooker French Onion Chicken

Ingredients
- 2 lb bone-in, skin-on chicken thighs
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 3 large yellow onions, thinly sliced
- 2 tbsp unsalted butter
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 2 sprigs fresh thyme
- 1 bay leaf
- 2 tbsp cornstarch
- 2 tbsp water
Instructions
- Pat the chicken thighs dry with paper towels. Season both sides with the kosher salt and black pepper. Heat the olive oil in a large skillet over medium-high heat. Place the chicken skin-side down and cook without moving until the skin is deep golden and crispy, about 5-6 minutes. Flip and cook another 4-5 minutes. Transfer the chicken to a plate; it will not be cooked through at this point.
- Reduce the heat to medium. Add the butter to the same skillet. Once melted, add the sliced onions. Cook, stirring occasionally, until the onions are soft and deeply golden, about 15-20 minutes. Scrape up any browned bits from the bottom of the pan as the onions release their moisture.
- Pour the beef broth into the skillet with the onions. Add the Worcestershire sauce, thyme sprigs, and bay leaf. Stir to combine, scraping up any browned bits from the bottom of the pan. Bring the mixture to a simmer, then remove from heat.
- Pour the onion mixture into the slow cooker. Nestle the seared chicken thighs into the onions, skin-side up. Spoon some of the onions over the chicken. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fork-tender and registers 165°F (74°C) in the thickest part.
- When the chicken is done, carefully transfer it to a serving platter and tent loosely with foil. Remove the thyme sprigs and bay leaf. In a small bowl, whisk the cornstarch with the water to make a slurry. Stir the slurry into the slow cooker. Cover and cook on high for 15-20 minutes, until the gravy thickens.
- Spoon the thickened onion gravy over the chicken thighs. Serve hot, with extra gravy on the side. The meat should pull apart easily with a fork.
