Tips for success
To get the best texture from the linguine, make sure it's fully submerged in the sauce before covering the slow cooker. If the pasta isn't completely covered, it may cook unevenly.
You can gently press it down with a spoon after adding, and if you're using a larger slow cooker, you might need to break the linguine in half to fit. Stirring once halfway through the 15-minute cook can also help, but do it gently to avoid breaking the seafood.
For an extra layer of flavor, consider toasting the chili flakes in the olive oil before adding them to the slow cooker — this releases their oils and makes the sauce even more aromatic.
If you like a thicker sauce, you can remove the seafood and pasta after cooking and simmer the sauce on HIGH with the lid off for 10–15 minutes to reduce it, then return everything to the pot. Just be careful not to overcook the seafood.
Variations
- Milder Version: Reduce the Calabrian chili flakes to 1/2 teaspoon or omit them entirely. Add a pinch of sweet paprika for color without heat. You can also serve with extra chili flakes on the side for those who want more spice.
- Add Clams: Include 1/2 pound of littleneck clams along with the mussels. Scrub the clams well and add them at the same time as the other seafood. Discard any that don't open after cooking. The briny liquid from the clams will enhance the sauce.
- Use Chicken or Vegetable Broth: Replace the red wine with an equal amount of chicken or vegetable broth. Add a teaspoon of red wine vinegar at the end to mimic the acidity of the wine. This makes the dish alcohol-free while keeping the flavor balanced.
- Creamy Fra Diavolo: For a creamy twist, stir in 1/2 cup of heavy cream during the last 5 minutes of cooking. This mellows the heat and adds a luxurious richness. Adjust the chili flakes to taste, as the cream will temper the spice.
Storage and make-ahead
- Fridge
- Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop with a splash of broth or water.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator and reheat gently.
- Reheat
- Reheat in a skillet over medium-low heat, adding a splash of water or broth to loosen the sauce. Stir gently until heated through.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The seafood may become slightly more firm upon reheating, but the flavor will remain delicious.
To reheat, gently warm in a skillet over medium-low heat, adding a splash of water or broth to loosen the sauce if needed. Avoid using the microwave, as it can make the seafood rubbery. Let leftovers cool for no more than 2 hours before refrigerating.
The sauce base can be prepared up to 2 days ahead. Combine the tomatoes, wine, garlic, chili flakes, oregano, and olive oil in the slow cooker, then refrigerate in a covered container.
When ready to cook, transfer the sauce to the slow cooker and cook on LOW for 3 hours, then proceed with the seafood and pasta. You can also clean the mussels and peel the shrimp a day ahead, storing them in the refrigerator.
Serving ideas
Serve the seafood Fra Diavolo immediately, twirling the linguine into nests on warm plates. Arrange the shrimp, calamari, and mussels on top, then spoon extra sauce over each serving. Garnish with a generous sprinkle of fresh parsley and place lemon wedges on the side so everyone can squeeze fresh juice over their portion. A glass of the same dry red wine used in the sauce is a natural pairing.
This dish is hearty enough to stand alone, but it also pairs well with a simple green salad dressed with lemon vinaigrette and crusty bread for soaking up every last bit of the spicy sauce. For a festive occasion, serve it as the centerpiece of a seafood feast, perhaps with grilled vegetables or a light risotto on the side. The leftovers are just as good the next day, served cold or gently reheated.
