Tips for success

To enhance the presentation, garnish the finished plate with a sprinkle of fresh cilantro or parsley if desired. This adds a bright, herbaceous note that contrasts beautifully with the deep, warm spices of the ras el hanout.

Adding a small squeeze of fresh lemon juice just before serving can also help to elevate the flavors of the fish and cut through the richness of the tomato coulis.

If you prefer a thicker sauce, you can remove the fish and vegetables once cooked and set them aside. Then, turn the slow cooker to the high setting and let the sauce reduce for an additional 10 to 15 minutes with the lid off. This will concentrate the tomato flavor and create a more robust consistency that clings better to the semolina when served.

Variations

  • Spicy Fish Couscous: Add a teaspoon of harissa paste or a pinch of red pepper flakes to the tomato coulis before cooking to introduce a pleasant heat that complements the aromatic spices.
  • Mediterranean Style: Incorporate halved kalamata olives and sun-dried tomatoes into the slow cooker to add a briny, concentrated depth that pairs wonderfully with the white fish and carrots.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to two days. Ensure the container is sealed properly to maintain freshness and prevent odor transfer.
Freezer
Freezing is not recommended as the delicate texture of the white fish and the consistency of the tomato coulis may change significantly upon thawing.
Reheat
Reheat gently in a saucepan over low heat until warmed through, or use a microwave-safe dish, heating in 30-second intervals to avoid overcooking the fish.

Allow any leftovers to cool to room temperature for no more than two hours before transferring them to an airtight container. Keep the fish and sauce separate from the semolina if possible, as the semolina will continue to absorb liquid over time, which may alter the final texture of the leftovers when reheated.

The vegetables and sauce can be prepared ahead of time and stored in the refrigerator for up to 24 hours before cooking.

When ready to cook, simply add the fish to the slow cooker along with the prepared mixture and proceed with the recipe as instructed. This makes for a convenient way to reduce preparation time on busy days while still enjoying a fresh, hot meal.

Serving ideas

Serve this dish in shallow bowls to ensure the semolina can effectively soak up the flavorful tomato coulis.

Placing a generous portion of semolina at the bottom and layering the fish and vegetables on top allows each guest to enjoy the perfect balance of ingredients in every bite. This presentation is both visually appealing and practical for enjoying the stew-like nature of the meal.

Accompany this meal with a crisp side salad dressed in a light vinaigrette to provide a refreshing contrast to the warm, spiced flavors of the fish couscous.

The acidity from the salad dressing balances the savory, aromatic profile of the main dish, creating a more dynamic dining experience that highlights the versatility of this simple, one-pot preparation.

Frequently asked questions

Can a different type of liquid be used instead of tomato coulis?
While tomato coulis provides the ideal thickness and flavor, crushed tomatoes or a mix of tomato sauce and vegetable broth can be used. Adjust the consistency as needed to ensure the fish remains submerged during the cooking process.
Is it possible to cook the semolina directly in the slow cooker?
It is not recommended to cook the semolina in the slow cooker with the fish, as it will likely become mushy and absorb all the liquid. It is best to prepare the semolina separately according to package instructions for the best texture.
Why is it important to use a slow cooker for this recipe?
The slow cooker provides a steady, low-temperature environment that is perfect for gently braising fish. This method prevents the protein from toughening, ensuring a moist and flaky result that is difficult to achieve with faster cooking methods.
