Before you start

Before starting, slice the skirt steak against the grain into 1-inch strips. Slice the bell peppers and red onion into thin strips. Juice the lime. Shred the Monterey Jack cheese if starting from a block.

Have the slow cooker ready and place all ingredients nearby. No need to pre-cook anything—the slow cooker does all the work. This recipe is truly dump-and-go, so the only prep is the initial slicing and measuring.

Ingredients at a glance (7)
  • 2 lb skirt steak, sliced into strips
  • 3 bell peppers (red, yellow, orange), sliced
  • 1 medium red onion, sliced
  • 2 tbsp fresh lime juice
  • 1/2 cup sour cream
  • 2 cups shredded Monterey Jack cheese
  • 8 warm flour tortillas

Instructions

Layer and Ignore

  1. Layer the raw ingredients
Place the sliced skirt steak strips into the bottom of the slow cooker. Scatter the sliced bell peppers and red onion over the meat. Drizzle with fresh lime juice.
Look for The meat and vegetables should be evenly distributed in the pot.
Tip For even cooking, cut the steak against the grain into 1-inch strips.
  2. Add the creamy layer
Dollop the sour cream over the top of the meat and vegetables. Sprinkle the shredded Monterey Jack cheese evenly over everything.
Look for The top of the mixture is covered with cheese and sour cream.
Tip Do not stir; the layers will meld as they cook.

At the end of this phase, the slow cooker contains distinct layers: raw steak strips on the bottom, topped with colorful peppers and onions, and finished with dollops of sour cream and a blanket of shredded cheese. The ingredients are not mixed, and the dairy sits on top. The raw meat is visible only at the edges. The pot is ready to cover and cook.

Slow Simmer to Tender

  1. Slow cook until tender
Cover the slow cooker and cook on low for 6 to 8 hours, until the steak is fork-tender and the peppers are soft. Stir gently before serving. Let it rest for 3 minutes before slicing.
Look for The meat shreds easily with a fork and the sauce is creamy.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Cooking on low keeps the steak tender; high heat can toughen it.

After 6 to 8 hours on low, the slow cooker is bubbling gently. The cheese has melted into the sauce, and the sour cream has blended in, creating a creamy, golden-colored liquid. The steak is fork-tender, and the peppers are soft and slightly charred at the edges. The aroma is rich with beef, peppers, and a hint of lime. Stir gently to combine.

Warm and Serve

  1. Serve with warm tortillas
Warm the flour tortillas according to package directions. Spoon the steak and pepper mixture into the tortillas and serve immediately.
Look for The filling is steaming and aromatic.
Tip Warm tortillas in a dry skillet for a light char.

The filling is steaming and fragrant. The sauce is creamy and coats the meat and vegetables. The tortillas are warm and pliable. When you spoon the filling onto a tortilla, it holds together without being watery.

Serve immediately, with extra lime wedges if desired. The plate should be colorful and inviting, with tender beef and soft peppers wrapped in a warm tortilla.

Common mistakes

One common mistake is stirring the ingredients immediately after adding the dairy, which can cause the sour cream to curdle. Let the layers set during the first few hours. Another is cooking on high, which can make the steak tough and dry.

Always use low for the best texture. Finally, don't skip slicing the steak against the grain—cutting with the grain leaves it chewy. Use a sharp knife for clean slices.

How to tell it’s done

The steak is done when it is fork-tender and easily shreds with a fork. The internal temperature should reach at least 145°F (63°C) for whole cuts of meat; however, slow cooking for 6 to 8 hours will far exceed that, ensuring safety and tenderness.

The peppers should be soft and the sauce creamy and well combined. If the sauce seems thin, let it cook uncovered for an additional 30 minutes to thicken.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
