Before you start

Before starting, ensure all vegetables are washed, peeled if desired, and sliced into thin, uniform rounds. Having the potatoes and onions prepped allows for quick assembly. Take the cube steaks out of the refrigerator just before you begin to maintain the proper temperature.

Ensure your slow cooker insert is clean and dry. Have your measuring spoons and ingredients ready on the counter to streamline the process, as the assembly is very fast and requires no complex preparation steps.

Ingredients at a glance (5)
  • 4 pieces cube steak
  • 4 cups potatoes, thinly sliced
  • 1 cup onion, thinly sliced
  • 1 tbsp garlic pepper
  • 10.5 oz cheddar soup

Instructions

Layering the ingredients

  1. Layering the base
Place the raw cube steaks at the bottom of the slow cooker insert. Ensure they are laid out in a single layer to promote even cooking throughout the process.
Look for The steaks cover the bottom of the insert.
Tip If the steaks overlap slightly, that is fine, but try to keep them flat.

At this phase, the slow cooker contains the raw steak, potatoes, onions, and seasonings. Check that the meat is placed at the very bottom, as this is the most critical step to ensure the protein cooks safely and absorbs the moisture from the other ingredients.

The layering should be neat and even, providing a stable foundation for the soup to be poured over the top without needing to stir the mixture, which keeps the potato slices intact.

Adding the sauce

  1. Adding vegetables and seasoning
Layer the thinly sliced potatoes and onions over the beef. Sprinkle the garlic pepper evenly over the top of the vegetable layer to ensure consistent flavor distribution.
Look for The seasonings are distributed across the surface.
Tip Use a mandoline slicer for perfectly uniform potato slices that cook at the same rate.

The cheddar soup is now distributed over the top of the potatoes. Ensure the soup covers the edges of the potatoes to prevent them from drying out during the long cook. The slow cooker is now ready to be covered. Verify that the lid is tightly sealed and the control is set to the low setting. The assembly phase is complete, and the slow cooker will now manage the temperature for the duration of the cooking time.

Final cooking and resting

  1. Cooking the dish
Pour the cheddar soup over the potatoes and onions. Cover and cook on low for 8 hours. Before serving, verify the internal temperature of the beef reaches 145°F (63°C). Let the meat rest for 5 minutes before serving.
Look for The sauce is bubbly and the potatoes are fork-tender.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Do not lift the lid during the cooking process, as this releases heat and increases cooking time.

The dish has finished its cooking cycle and the sauce is creamy and fragrant. Verify the potato tenderness with a fork and check the internal temperature of the steak. The house should smell savory and rich. Once the internal temperature reaches 145°F (63°C), turn off the slow cooker and let the meat rest. This final rest is vital for the texture of the steak, ensuring it remains juicy and tender when served to the table.

Common mistakes

A common mistake is slicing the potatoes too thick, which prevents them from cooking through at the same rate as the meat. Ensure slices are no more than 1/8 inch thick.

Another error is lifting the lid frequently during the cooking process; every time the lid is opened, heat escapes and the cooking time needs to be extended. Finally, do not overcrowd the slow cooker, as this can lead to uneven cooking and a sauce that does not thicken properly during the long cycle.

How to tell it’s done

The dish is considered done when the potatoes are fork-tender and the cheddar sauce has thickened into a creamy consistency. The cube steak must reach an internal temperature of at least 145°F (63°C) as measured by a meat thermometer inserted into the thickest part of the meat.

Once this temperature is reached, allow the meat to rest for at least 5 minutes before serving to ensure the juices are properly distributed and the texture is at its best.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
