Tips for success

For the most flavorful sauce, use a good-quality sweet Marsala wine—it’s the star of the dish. If you can’t find sweet Marsala, dry Marsala with a little brown sugar works as a substitute. Don’t skip the beef broth; it adds depth and richness that complements the sweetness of the wine.

For a more intense mushroom flavor, use a mix of cremini and shiitake mushrooms. Searing the pork chops before slow-cooking adds a nice caramelized flavor, but it’s not essential—the slow cooker does the heavy lifting.

To make this recipe ahead, you can assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, simply place the insert in the slow cooker and cook as directed.

The leftovers keep well in the refrigerator for up to 4 days, and the sauce actually gets even more flavorful as it melds. When reheating, do so gently on the stovetop or in the microwave, adding a splash of broth or cream to loosen the sauce if needed.

Variations

  • Chicken Marsala: Swap the pork chops for boneless, skinless chicken thighs. Cook on LOW for 4 hours instead of 6, or until the chicken is tender and reaches 165°F (74°C).
  • Extra Veggies: Add a cup of sliced shallots or pearl onions along with the mushrooms for a sweeter, more aromatic sauce. You can also toss in a handful of fresh spinach at the end and stir until wilted.
  • Dairy-Free: Replace the heavy cream with full-fat coconut milk and use a dairy-free butter substitute. The sauce will have a slightly coconut flavor but still be creamy and delicious.
  • Herb-Infused: Add a few sprigs of fresh thyme or rosemary to the slow cooker during cooking. Remove the sprigs before serving and garnish with fresh chopped parsley.

Store leftover pork chops and sauce in an airtight container in the refrigerator for up to 4 days. This dish is perfect for making ahead. Assemble the ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, set the slow cooker to LOW and cook for 6 hours.

The sauce can be finished with cream and butter just before serving. Leftovers can be stored in the refrigerator for up to 4 days and taste even better the next day as the flavors meld.

Serving ideas

Serve the pork chops and sauce over garlic mashed potatoes to soak up every bit of the creamy Marsala sauce. The richness of the sauce pairs beautifully with the buttery potatoes.

Alternatively, buttered pappardelle noodles are a classic choice—the wide ribbons catch the sauce and mushrooms perfectly. For a lighter option, serve over polenta or with crusty bread on the side.

Garnish with a sprinkle of fresh parsley or thyme if you have it, though the dish is delicious on its own. A side of sautéed spinach or a crisp green salad adds a fresh contrast to the rich sauce. For a complete Italian-trattoria experience, pour a glass of the same Marsala wine you used in the recipe—it’s a wonderful pairing.

Frequently asked questions

Can this recipe be made with chicken instead of pork?
Yes, boneless, skinless chicken thighs work beautifully. Cook on LOW for 4 hours, or until the chicken is tender and reaches an internal temperature of 165°F (74°C). Chicken breasts can be used but may dry out; reduce cooking time to 3 hours and check for doneness.
Can the Marsala wine be substituted?
If you don't have Marsala, you can use dry sherry or a dry white wine with a teaspoon of brown sugar added to mimic the sweetness. The flavor will be slightly different but still delicious. For a non-alcoholic version, use extra beef broth with a tablespoon of balsamic vinegar.
Why is the sauce thin?
The sauce may be thin if the slow cooker produced more liquid than expected. To thicken, simmer the sauce uncovered on HIGH for 10–15 minutes, or whisk in a slurry of 1 tablespoon cornstarch and 2 tablespoons cold water. Stir until the sauce thickens.
How long can leftovers be stored?
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth or cream to loosen the sauce. For longer storage, freeze for up to 3 months.
Can this recipe be cooked on HIGH?
Yes, you can cook on HIGH for 3 to 4 hours instead of 6 on LOW. The pork will be tender but may not be as fall-apart as the low-and-slow method. Check for doneness with a thermometer—it should read at least 145°F (63°C).

Close-up of succulent pork chops covered in a rich, creamy mushroom Marsala sauce in a black slow cooker.

Ingredients

  • 4 thick boneless pork chops
  • 12 oz cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 3/4 cup sweet Marsala wine
  • 3/4 cup beef broth
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • kosher salt to taste
  • black pepper to taste

Instructions

  1. Place the pork chops in the bottom of a 6-quart slow cooker. Scatter the sliced cremini mushrooms and minced garlic over the top. Pour the sweet Marsala wine and beef broth around the chops, making sure the liquid comes up around the meat but does not fully submerge it. Season with a pinch of kosher salt and black pepper.
  2. Sprinkle the top with a little more salt and pepper if desired. Cover the slow cooker with the lid. Set the temperature to LOW and cook for 6 hours, until the pork is fork-tender and easily pulls apart. Let it rest for 3 minutes before slicing.
  3. After 6 hours, carefully remove the pork chops to a plate and cover loosely with foil. Stir the heavy cream and butter into the slow cooker liquid. Let the sauce simmer on HIGH, uncovered, for 10–15 minutes, until it thickens slightly and becomes velvety. Return the pork chops to the sauce and warm through for 5 minutes. Let it rest for 3 minutes before slicing.
  4. Serve the pork chops and sauce over garlic mashed potatoes or buttered pappardelle noodles. Ladle extra mushroom Marsala sauce over the top. Let the pork rest for at least 3 minutes before slicing or shredding.
