Before you start

Before you begin, gather all your ingredients and ensure your slow cooker is clean and positioned on a stable, heat-resistant surface. Slice the mushrooms into uniform pieces so they cook at the same rate.

Cube the brie cheese into small, even pieces, which will help them melt more evenly into the sauce. Keep your chicken refrigerated until the very last moment to ensure food safety and consistent results throughout the cooking process.

Ingredients at a glance (4)
  • 4 pieces chicken breasts, boneless and skinless
  • 8 oz mushrooms, sliced
  • 1 packet onion soup mix
  • 8 oz brie cheese, cubed

Instructions

Layering the ingredients

  1. Prepare the slow cooker
Place the raw chicken breasts at the bottom of the slow cooker insert. Ensure they are laid out in an even layer to promote consistent cooking throughout the entire process.
Look for Chicken is arranged flat on the bottom.
Tip Pat the chicken dry with paper towels before placing it in the cooker to improve texture.

At this stage, the slow cooker contains the raw chicken and mushrooms topped with the onion seasoning. Everything is neatly arranged in the base of the insert. Check that the chicken is not overlapping to ensure it cooks evenly and that the onion soup mix is spread across the surface to flavor the entire dish as it begins to release moisture during the initial heating phase.

Seasoning and prep

  1. Add aromatics and seasoning
Scatter the sliced mushrooms evenly over the chicken breasts. Sprinkle the contents of the onion soup mix packet over the mushrooms and chicken, ensuring the seasoning is well distributed for maximum flavor.
Look for Seasoning covers the mushrooms and chicken.
Tip Use a variety of mushrooms like cremini or white button for the best flavor.

The ingredients are now layered with the soup mix providing a savory coating. The mushrooms are beginning to settle into the gaps between the chicken pieces. Ensure the seasoning is distributed well so that all parts of the chicken are flavored. There should be no dry spots of seasoning left on top of the mushrooms, as these will hydrate during the cooking process.

Melting the cheese

  1. Add cheese and cook
Distribute the cubed brie cheese over the top of the ingredients. Cover the slow cooker and cook on low for 4 hours. Once finished, ensure the chicken reaches an internal temperature of 165°F (74°C). Allow the chicken to rest for 5 minutes before serving to retain juices.
Look for Cheese is melted and chicken is tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Removing the rind of the brie before cubing creates a smoother, more uniform sauce.

The brie is distributed across the top, ready to melt into a creamy sauce. Once the cooking time is complete, the brie should be fully incorporated into the liquid.

The chicken will look tender, and the sauce will have a rich, opaque appearance. Check that the chicken is cooked through to the required temperature and that the brie has formed a cohesive, velvety sauce before serving.

Common mistakes

A common mistake is overcrowding the slow cooker, which can lead to uneven cooking and excess liquid. Ensure the chicken is in a single layer. Another error is failing to remove the rind from the brie; while edible, the rind does not melt as smoothly as the creamy interior, so removing it ensures a luxurious sauce.

Finally, avoid lifting the lid during the cooking process, as this releases heat and moisture, which are critical for the proper emulsification of the brie sauce.

How to tell it’s done

The chicken is done when it is opaque throughout and reaches an internal temperature of 165°F (74°C). The sauce should be thick, creamy, and visibly glossy, with the brie fully melted into the mushroom juices.

If the sauce appears too thin, you can let it sit uncovered for a few minutes after turning off the slow cooker to allow the residual heat to thicken it slightly before serving your meal.

  • Poultry: 165°F (74°C) in the thickest part
