Tips for success

If you prefer a more vibrant presentation, garnish the finished dish with a sprinkle of fresh chopped parsley or basil just before serving. This adds a pop of color and a fresh herbal contrast to the rich, creamy sauce. You can also serve this meal alongside a simple green salad or steamed green beans to balance the richness of the creamy parmesan sauce with something crisp and light.

The intensity of the sun-dried tomato flavor can be adjusted by choosing either oil-packed or dry-packed varieties. Oil-packed sun-dried tomatoes often have a softer texture and a slightly richer flavor, which integrates well into the sauce.

If using oil-packed, drain them well before adding to the slow cooker to prevent the final sauce from becoming excessively greasy, as the chicken skin will also release a significant amount of fat.

Variations

  • Spicy Italian Chicken: Add 1/2 teaspoon of red pepper flakes to the slow cooker along with the Italian seasoning to give the creamy sauce a subtle, warming heat that balances the richness.
  • Spinach Added Version: Stir in two cups of fresh baby spinach during the final 10 minutes of cooking. The heat from the sauce will wilt the spinach perfectly, adding a pop of color.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Freezer
Freeze for up to 1 month in a freezer-safe container.
Reheat
Gently reheat in the microwave or on the stovetop until the chicken is hot throughout.

Allow any leftovers to cool completely at room temperature for no more than two hours before transferring them to an airtight container. Store the chicken and sauce together to keep the meat moist. When properly stored, the leftovers will maintain their quality for up to three days in the refrigerator. Ensure the container is sealed tightly to prevent the sauce from absorbing other odors in the fridge.

While this dish is best served fresh, you can prepare the ingredients in the slow cooker insert the night before and keep them in the refrigerator.

Remove the insert from the fridge about 30 minutes before you are ready to start the slow cooker to avoid placing a cold ceramic vessel directly into a hot base, which can cause cracking. Simply set the timer and proceed with the cooking instructions as normal.

Serving ideas

This dish is a complete meal on its own, but it pairs beautifully with crusty bread or garlic toast to soak up the leftover creamy sauce. The sauce is the highlight of the recipe, so ensure each serving includes a generous portion of the creamy mixture alongside the chicken and potatoes.

The combination of tender poultry and softened potatoes makes this a satisfying main course that requires little effort to plate and present.

For a larger gathering, you can easily double the recipe if your slow cooker is large enough to accommodate the additional ingredients. If doubling, ensure you maintain the same layering order to ensure even cooking.

Serve directly from the slow cooker to keep the dish warm throughout the meal, and provide a large serving spoon to ensure everyone gets a good amount of the creamy parmesan sauce on their plate.

Frequently asked questions

Can this dish be made in a pressure cooker?
Yes, this recipe can be adapted for a pressure cooker. Follow the same layering instructions and cook on high pressure for 15 minutes, followed by a natural release. Note that the texture of the sauce may be slightly thinner, so you may need to simmer it for a few minutes after opening the lid to reach the desired consistency.
What is the best way to prevent the sauce from breaking?
To prevent the sauce from breaking or separating, ensure the cream cheese is fully melted and stirred into the cooking juices at the end of the cooking process. Using full-fat cream cheese and avoiding excessive heat during the final stages will help maintain a stable, creamy emulsion. If it does separate slightly, a quick, vigorous whisking will usually bring it back together.
Can other cuts of chicken be used?
Chicken thighs are an excellent alternative to drumsticks. They offer a similar fat content and tenderness, making them highly suitable for the slow cooking process. If using boneless, skinless thighs, reduce the cooking time slightly, as they will cook faster than bone-in chicken. Always ensure the internal temperature reaches 165°F (74°C) regardless of the cut used.

Ingredients

  • 8 pieces bone-in chicken drumsticks
  • 1 lb baby potatoes, halved
  • 1/3 cup sun-dried tomato strips
  • 1 tbsp Italian seasoning
  • 1/4 cup grated parmesan cheese
  • 8 oz cream cheese

Instructions

  1. Arrange the bone-in chicken drumsticks in a ring around the bottom of the slow cooker insert. Add the halved baby potatoes and sun-dried tomato strips into the center and around the chicken. Sprinkle the Italian seasoning and grated parmesan cheese evenly over the top of the chicken and vegetables. Place the block of cream cheese in the center of the insert on top of the other ingredients.
  2. Cover the slow cooker with its lid and cook on low for 4 to 6 hours or on high for 2 to 3 hours. The cream cheese will melt into the juices from the chicken and tomatoes to create a thick, creamy sauce. Monitor the progress occasionally to ensure the sauce does not become too thin or watery during the cooking process.
  3. Once the cooking time is complete, verify the chicken is fully cooked by checking for an internal temperature of 165°F (74°C) using a meat thermometer inserted into the thickest part of the drumstick. Remove the chicken from the slow cooker and let it rest for at least 5 minutes before serving. Stir the sauce in the slow cooker to combine the melted cream cheese and parmesan thoroughly before plating.
