Before you start

Before starting, ensure your slow cooker insert is clean and dry. Prepare the mini peppers by washing them thoroughly, removing the stems, and cutting them into halves.

If you prefer smaller pieces, you can cut them into quarters, though halves hold their shape beautifully during the long cook time. Ensure your cream cheese is at room temperature for the best melting results, although this is not strictly necessary for slow cooking.

Ingredients at a glance (4)
  • 6 boneless skinless chicken thighs
  • 1 lb mini sweet peppers, halved and deseeded
  • 2 tbsp Italian seasoning
  • 8 oz cream cheese, block style

Instructions

Layering the ingredients

  1. Assemble the slow cooker
Place the boneless skinless chicken thighs into the bottom of the slow cooker insert. Arrange them in an even layer to ensure consistent heat distribution during the cooking process.
Look for Chicken pieces should be arranged evenly across the base of the insert.
Tip Pat the chicken dry with paper towels before adding it to the cooker for a cleaner cook.
  2. Add vegetables and seasoning
Scatter the halved mini sweet peppers over the chicken. Sprinkle the Italian seasoning evenly over the peppers and chicken to distribute the herbs thoroughly.
Look for Ensure the seasoning covers the surface of the peppers and chicken.
Tip Use a mix of red, orange, and yellow peppers for a vibrant appearance.

At this phase, your slow cooker should be filled with raw chicken thighs topped with peppers and seasoning. Ensure the ingredients are distributed evenly so the heat can circulate properly. The cream cheese block should sit right on top. Once everything is layered, secure the lid firmly. There is no need to add any liquid, as the peppers will release moisture as they cook.

Slow cooking the chicken

  1. Add cream cheese and cook
Place the block of cream cheese on top of the seasoned chicken and peppers. Cover the slow cooker with the lid and cook on low for 4 to 6 hours or on high for 2 to 3 hours.
Look for The cream cheese will soften and begin to melt into the juices.
Tip Do not lift the lid during the first few hours to maintain the internal temperature.

During the cooking phase, the slow cooker will do all the work. You will notice steam condensing under the lid, which is a good sign. The peppers will soften and release their sweet juices, which combine with the slowly melting cream cheese.

The kitchen should begin to smell savory and herbaceous. Do not be tempted to lift the lid; let the appliance maintain its steady temperature throughout the process.

Finishing the sauce

  1. Finish and serve
Once the chicken reaches an internal temperature of 165°F (74°C), remove it from the heat. Use tongs to gently stir the melted cream cheese into the pan juices to form a smooth, creamy sauce. Let the chicken rest for 5 minutes before serving.
Look for The sauce should be thick and creamy, coating the chicken and peppers completely.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the sauce seems too thin, whisk it vigorously or let it sit uncovered for a few minutes.

Once the cooking time is complete, the chicken should be soft and tender. The cream cheese will have transformed into a thick, glossy sauce. Use your tongs to stir the sauce, ensuring the cream cheese is fully incorporated with the meat juices and seasonings. The sauce should coat the back of a spoon. Check the temperature, let it rest, and it is ready to be plated for dinner.

Common mistakes

A common mistake is opening the slow cooker lid too frequently, which allows heat to escape and significantly increases the cooking time. Avoid over-stirring the sauce until the very end, as the goal is to let the ingredients braise undisturbed.

Another mistake is using chicken breasts instead of thighs without adjusting the time; breasts dry out much faster than thighs and should be checked for doneness earlier to maintain the best quality.

How to tell it’s done

The chicken is done when it is fork-tender and reaches an internal temperature of 165°F (74°C). The sauce should be thick, creamy, and opaque, with the peppers softened but not completely disintegrated.

Check the chicken at the thickest part with a meat thermometer to ensure safety. Let the dish rest for at least 5 minutes before serving to allow the sauce to settle and the juices to redistribute throughout the meat.

  • Poultry: 165°F (74°C) in the thickest part
