Before you start

Before beginning, ensure that you have all ingredients measured and ready. Take the chicken drumsticks out of the refrigerator about 20 minutes before cooking to take the chill off, but do not leave them at room temperature for longer than 30 minutes.

Ensure your slow cooker is placed on a stable, heat-resistant surface away from the edge of the counter. Prepare a small bowl for mixing the stuffing and a separate bowl for combining the soup and sour cream to ensure a smooth assembly process.

Ingredients at a glance (5)
  • 8 chicken drumsticks, bone-in and skin-on
  • 6 cups dry stuffing cubes
  • 1/2 cup melted butter
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup sour cream

Instructions

Layering the drumsticks

  1. Prepare the slow cooker base
Arrange the chicken drumsticks in a single layer at the bottom of the slow cooker insert. Ensure the chicken is evenly distributed to allow for uniform cooking throughout the process.
Look for Chicken is arranged in a single layer
Tip Pat the drumsticks dry with paper towels before placing them in the cooker to help the seasoning adhere better.

The chicken drumsticks are placed in a neat, single layer covering the bottom of the slow cooker stoneware. The surface is clean and the chicken is ready for the seasoning and sauce. Ensure there is no overlap, as this will help the chicken cook uniformly and absorb the flavors of the creamy sauce more effectively during the long, slow cooking phase.

Adding stuffing and sauce

  1. Add stuffing and sauce
In a medium bowl, toss the dry stuffing cubes with the melted butter until evenly coated. Spread the buttered stuffing over the chicken drumsticks. Whisk the condensed cream of chicken soup and sour cream together in a separate bowl, then spoon this mixture over the top of the stuffing.
Look for Stuffing is coated and sauce is spread
Tip Spread the creamy mixture gently to ensure it covers the stuffing completely for even moisture.

The stuffing cubes are thoroughly coated with melted butter and spread evenly over the chicken. The mixture of cream of chicken soup and sour cream is spread smoothly over the top, creating a unified layer.

The slow cooker insert should look well-filled but not overflowing, with the sauce starting to settle between the stuffing cubes and around the drumsticks.

Cooking to perfection

  1. Cook and serve
Cover the slow cooker and cook on low for 4 to 6 hours or on high for 3 hours. The chicken is done when it reaches an internal temperature of 165°F (74°C). Allow the chicken to rest for 5 minutes before serving with the creamy stuffing.
Look for Chicken skin is soft and fully cooked
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use a meat thermometer inserted into the thickest part of the drumstick to ensure accuracy.

The chicken is fully cooked, with the meat tender and falling away from the bone. The creamy sauce has thickened and combined with the buttery stuffing to create a rich, cohesive gravy. The aroma should be savory and comforting, and the internal temperature of the chicken must reach 165°F (74°C) before you turn off the slow cooker and prepare to serve.

Common mistakes

A common mistake is overcrowding the slow cooker, which can lead to uneven cooking and soggy stuffing. Ensure the drumsticks are in a single layer to allow heat to circulate properly. Another mistake is using too much liquid or not enough stuffing, which results in a runny sauce.

Follow the ingredient ratios closely to maintain the desired consistency. Finally, avoid lifting the lid frequently during the cooking process, as this releases heat and moisture, significantly extending the cooking time and potentially drying out the chicken.

How to tell it’s done

The dish is fully cooked when the chicken drumsticks reach an internal temperature of 165°F (74°C). Use a digital meat thermometer inserted into the thickest part of the meat, being careful to avoid hitting the bone, which can give an inaccurate reading.

The chicken meat should be opaque, pull away easily from the bone, and the skin should be soft and tender. The creamy stuffing should be heated through and have a consistent, moist texture throughout the entire slow cooker insert.

  • Poultry: 165°F (74°C) in the thickest part
